- Baby potatoes - We prefer baby creamer potatoes because they're perfectly sized for this easy side dish. No peeling is involved either since they have thin skin. If you opt for larger potatoes, be aware that you will need to cut them into thick slices and you may need to peel the skin off.
- Parmesan cheese - Use the pre-grated parmesan, this seems to create the best base for making a nice crispy cheesy crust.
- Extra virgin olive oil & melted butter - Use unsalted butter so that you're able to control the salt level completely.
- Simple seasonings of choice - We use kosher salt, black pepper, oregano, smoked paprika, onion, and garlic powder. In this recipe, we actually used Tastefully Simple's Onion Onion and Garlic Garlic seasoning (which are incredible, by the way!) but you can simply use onion powder and garlic powder instead.
- Sour cream & mayo - For the optional dipping sauce.
- Lemon - We use juice and zest in the dipping sauce.
- Fresh herbs - We used a mixture of fresh parsley, chives, and dill to add to the dipping sauce and top the potatoes.

Here are a few suggestions on additional flavors to try, or simple variations to this recipe.
- Spicy. Add cayenne pepper, red pepper flakes, chili powder, or chipotle powder for a little bit of a spicy twist!

Score the potatoes by making 3-4 slits lengthwise in the potato, being very careful not to cut all the way through. The potato needs to stay intact. (Image 3)
Turn the potato widthwise, and 2-3 slits across to form a checkered pattern. (Image 4)

Add some melted butter, olive oil, and seasonings (salt, pepper, garlic powder, onion powder, smoked paprika, and oregano) to the potatoes. (Image 5)
Toss to combine, then add the remaining seasonings to the grated parmesan cheese in a separate bowl. (Image 6)
Add the remaining melted butter and olive oil to the bottom of the baking dish, making sure the entire bottom of the dish is covered. Next, gently sprinkle the parmesan mixture in an even layer on the bottom of the dish. (Image 7)
Once the cheese is in place, try not to move it at all. (Image 8)
Next, add the potatoes skin side down in a single layer on the bottom of the baking dish. Make sure there isn't much room between the potatoes. Drizzle any remaining oil or seasonings over the tops of the potatoes. (Image 9)
Roast for 40-45 minutes, until the potatoes are softened and the parmesan crust is golden brown. (Image 10) Allow the potatoes to sit in the pan for 7-10 minutes, and don't touch them!

- 4 tablespoons olive oil, divided
- 3 tablespoons unsalted butter, divided
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 teaspoons kosher salt
- 1 teaspoon oregano
- ½ teaspoon smoked paprika
- ½ teaspoon black pepper
- ½ cup grated parmesan cheese
Dipping sauce
- ¾ cup sour cream
- ¼ cup mayonnaise
- 1.5 tablespoons lemon juice (juice of ½ lemon)
- 1 tablespoon lemon zest (zest of 1 lemon)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon kosher salt (or to taste)
- 2 tablespoons fresh dill, minced
- 2 tablespoons fresh parsley, minced

Instructions
- Preheat the oven to 400°F.
- Combine ¾ cup sour cream, ¼ cup mayo, herbs, lemon zest, lemon juice, and seasonings (½ teaspoon garlic powder, ½ teaspoon onion powder, and ½ teaspoon kosher salt) in a bowl. Adjust seasonings to taste. Place in the fridge to allow the flavors to come together while the potatoes roast.
- In a mixing bowl, combine the potatoes and 2 tablespoons of olive oil, 1 tablespoon of melted butter, 1.5 teaspoons salt, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon oregano, ¼ teaspoon smoked paprika, and ¼ teaspoon black pepper. Toss to combine.
- Add the remaining 2 tablespoons of olive oil and 2 tablespoons of melted butter to the bottom of the baking dish. Make sure the bottom is coated evenly with the cooking oils.
- In a separate bowl, combine the parmesan cheese with the remaining seasonings (½ teaspoon salt, 1 teaspoon onion powder, 1 teaspoon garlic powder, ½ teaspoon oregano, ¼ teaspoon smoked paprika, and ¼ teaspoon black pepper). Toss to combine. Add the parmesan mixture to the bottom of the baking dish in an even layer as possible, trying not to move it much once it's placed down.
- Place the potatoes scored side down into the parmesan mixture. Make sure there's not much room between the potatoes. Bake for 40-45 minutes, until the potatoes are softened and the parmesan crust is golden brown.
