This Baked Asparagus with Lemon Dill and Goat Cheese is a super easy, gluten free and low carb vegetable dish that you can make quickly in one skillet. Here’s What You Need For Baked Asparagus with Lemon Dill and Goat Cheese:​

Ingredients:

  • 16 ounces asparagus (with the ends trimmed)
  • 2 tbsp olive oil
  • Juice of 1 lemon + more for garnish
  • 2-3 tablespoons fresh dill (Or to taste. See notes for dried dill or other herbs.)
  • 6 ounces goat cheese (or feta)
  • salt and pepper to taste

Recipe Notes:

Cheese: Goat cheese has been our first choice for things we’ve been making lately. We feel it instantly elevates a dish. No goat cheese on hand? Try feta cheese, or maybe even parmesan.

Spices: If you have fresh herbs, this is a great way to use them up. If you don’t, no sweat. You can substitute about 1 tsp of dried dill for every tablespoon of fresh dill. No dill lying around either? That’s okay! Improvise with savory herbs like parsley, oregano, thyme, basil or rosemary.

We personally love dill, so we probably added about a half a cup of fresh stuff, to be honest. It’s honestly a preference thing. 2-3 tablespoons of fresh should be a good place to start!

Preheat your oven to 375˚F. Wash your asparagus, and cut the ends off them. Place them in a cast iron skillet.

Add olive oil, fresh lemon juice, dill, salt and pepper to a mixing cup or bowl. Whisk together. Crumble the creamy goat cheese over top of the asparagus.

Drizzle the olive oil, lemon juice and herbs mixture over top. Add slices of fresh lemon if you want. Bake in the oven for 15-20 minutes, until asparagus is soft.

Serve and enjoy!
