- Fingerling potatoes - Any variety will work perfectly fine. Give them a good scrub, but don't peel them, and cut the potatoes in half lengthwise.
- Extra-virgin olive oil - To coat the potatoes when roasting.
- Kosher salt & black pepper - The essential seasonings.
- Garlic powder & onion powder - Highly recommend for adding some subtle, delicious flavor, but you can leave them off if you like.
- Butter- Optional, but drizzling a little bit on at the end before serving tastes amazing!
- Parmesan cheese- Also optional, but highly recommended. We grate on fresh parmesan right before serving.
- Fresh herbs of choice - We chose fresh parsley, but other could options would be fresh rosemary or thyme.

🔪Prep work
- Scrub the fingerling potatoes really well, and cut them in half lengthwise.
- Mince parsley, and grate parmesan cheese.
- Prepare your air fryer basket or trays with olive oil or parchment paper if needed. Our air fryer doesn't need any extra preparation, as the trays are nonstick.
In a medium bowl, season potatoes with olive oil, salt, pepper, garlic powder, onion powder, and about half of the parsley. Use a rubber spatula and toss to combine.
Preheat the air fryer to 400°F, and place potato halves in a single layer on the air fryer trays or in the basket of the air fryer.
Bake for 20-25 minutes, until the potatoes are golden brown. Be sure to flip the potatoes halfway through.
Now, place potatoes in a large bowl, add parmesan cheese, melted butter, and more parsley, and toss to combine.

Here are a few commonly asked questions about making the best potatoes!
Yes, you can, with a few tips. We chose fingerling potatoes for their thin skin. Since the skin of fingerling potatoes are so thin, they cook really quickly in the air fryer, and you don't have to do much prep work either. No peeling is necessary, and the skin is actually really tasty.
With that being said, you can use any small potato with thin skin. Try baby Yukon gold potatoes, baby red potatoes, or new potatoes.
You don't have to! We find that simply halving the potatoes lengthwise and giving them a really good rinse and scrub is enough. If you want your potatoes to be really crispy, however, you could soak the potatoes in cold water for about 30 minutes. Dry them off really well, then continue with the instructions.

Here are a few ways to change up the potatoes a bit.
- Spicy - Want to spice it up? Add some red pepper flakes and/or cayenne pepper! You could also try adding some
- Smoky - Add a dash of smoked paprika for more flavor!
- Herbed - Fresh rosemary, thyme, and sage would be wonderful additions to these potatoes for some really herbed flavor.
- Lemon- Add fresh lemon juice and zest for zing of brightness, citrus flavor, and acidity.
- Italian - Add Italian seasoning and some fresh basil for an Italian flair!
- Vegan or dairy free - Feel free to omit the butter and parmesan cheese if dairy free or vegan, or, you could use your favorite substitutes.

Air Fryer Fingerling Potatoes
Ingredients
- 2 pounds fingerling potatoes, halved lengthwise
- 3 tablespoons olive oil
- 2 teaspoons kosher salt (or to taste)
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 2 tablespoons fresh parsley, minced (optional)
- 3 tablespoons unsalted butter (optional)
- 2 ounces freshly grated parmesan cheese (optional)
Instructions
- Scrub potatoes very well, halve lengthwise but don't peel. Preheat your air fryer to 400°F, and prepare your air fryer basket or trays.
- Toss potatoes with olive oil, salt, pepper, garlic & onion powder, and about half of the parsley. Mix well to fully combine. Add to air fryer trays or basket in a single layer. Bake for 20-25 minutes until golden brown, flipping halfway through.
- When finished, drizzle with melted butter, parmesan cheese, salt, pepper, and fresh parsley. Enjoy!
