❤️Why we love this recipe
- Fun and festive. If you want a fun drink for Halloween parties Mix up a batch of these crowd pleasers, and wow everyone! These are so much fun to make and look at.
- Easy to make. You don't need any special equipment to make this easy cocktail. Just a small mixing glass and a bar spoon. Each individual drink is made in its own glass. You only need 5 main ingredients to make this!
🪄Ingredients
Here are the ingredients we used for this recipe. You can find more information for substitutions below.
- Empress Gin. We used two different types of Empress in this drink, the classic Indigo Gin, and the new Elderflower Rose Gin! The color is all natural from botanical ingredients like butterfly pea flowers and rose petals. Find Empress near you!
- Midori melon liqueur. Another essential ingredient in this recipe. This melon-flavored spirit is the base of the drink, adding a fruity sweetness to it.

✨Substitutions & variations
Here are a few suggestions on additional flavors to try, or simple variations to this recipe.
- No Empress gin. If you can't find Empress, you can always take a clear spirit and mix in food coloring.
- Swap the liquor. To achieve the same colors, you will need to use a clear spirit instead of gin (like vodka, rum, or tequila) and add food coloring for the same effect!
- No limes. You can swap the lime juice for any citrus juice you like, like orange juice or lemon juice. Just make sure they're freshly squeezed.
- Fizzy. Add a little fizz to top off the drink if you'd like. Some good choices would be club soda, tonic water (for you gin and tonic lovers!), ginger ale, or lemon-lime soda for sweetness. Ginger beer would also a very flavorful, spicy ginger flavor to the drink.
- Sweeter. Add more pineapple juice, or some simple syrup to this recipe for more sweetness.
- Add sparkle. You can use edible glitter in this drink to make it shimmer and shine! You could also use black sprinkles or black sanding sugar on the rim of the glass for an extra spooky look!

Add in the pineapple juice and stir to mix. (Image 2)
Add crushed ice cubes to a tall glass, like a highball glass. Pour in the green Midori, lime juice, and pineapple mixture. (Image 3)
Side note: We served ours in a stemless champagne skeleton hand flute for a festive touch, and it was a touch too small.
✨Pro tip: Use crushed ice to help the layers be more distinct.
Pour the Empress Indigo Gin over the top of a bar spoon into the glass. This will help it "float" and create a distinct layer. (Image 4)
Repeat the same process with the Empress Elderflower Rose gin. Add more ice if needed. (Image 5)
✨Pro tip: Using a bar spoon will help you pour slower so that the layers can set up better without mixing together!
Serve and enjoy right away!
✨Tips & tricks
- Use a clear glass. Opt for tall and clear glass to showcase the layers effectively!
- Use crushed ice. Skip the regular ice, and get crushed ice if you can. Crushed ice helps the layers look more distinct.
- Pour slowly and steadily. Use a spoon, the back of a spoon, or a bar spoon to pour each layer slowly and gently over the previous one. Pouring too quickly will mix the layers.
- Use a spoon to pour! To help disperse the liquid gently, hold a spoon upside down, just above the surface of the drink, and pour the new layer over the back of the spoon. This slows down the pour and minimizes splashing.
- Layer by density. Plan the order of your layers based on the density of the liquids, with the heaviest (most dense) at the bottom and the lightest at the top. In this case, that means we start with the Midori layer, and then end with the gin. In general, it's best to start with syrups and liqueurs, then end with spirits.

💭Frequently Asked Questions
Due to the dramatic presentation of this drink, we don't recommend making it in advance, or the layers will quickly bleed together.
As mentioned above, it's really best to enjoy this drink right away, however, it can be stored in the fridge for a couple of hours after making it. The longer it sits after preparing, the more the ice will melt and water down the drink.
