🍓Ingredients
Here are the ingredients we used for this recipe. You can find more information for substitutions below.
- Butter. Use European-style butter if possible for lots of flavor! It has to be softened butter, so you will want to leave it out for at least an hour or two before beginning. We also like to use salted butter for this recipe to add just the right amount of salt. If you only have unsalted butter, that's totally fine, and you can just add a bit of kosher salt on your own. - Strawberries. Juicy, ripe fresh strawberries. Make sure they're room temperature, or else they will just cause your butter to seize up when they get added if they are too cold.
- Milk. Room temperature. You may or may not need it. It's not 100% necessary, but it helps make the butter extra smooth and fluffy.
- Vanilla. This really brings the whole strawberry shortcake flavor together. We used vanilla bean paste but of course, vanilla extract works too.

✨Substitutions
Here are a few suggestions on additional flavors to try, or simple variations to this recipe.
- Use frozen strawberries. If you don't have fresh berries, that's okay! You can thaw frozen strawberries. Just be sure to squeeze out the excess water or the butter will become too soupy.
- Use strawberry jam. You can use strawberry preserves or jam instead of fresh fruit if you'd like as well. Adding a drizzle of this homemade strawberry simple syrup would also add some more intense strawberry flavor and a bit of extra sweetness. If you go this route, just be sure to scale back on the amount of powdered sugar, or it will probably be too sweet.
- Freeze-dried strawberries. Yet another route you can take is using pulverized freeze-dried strawberries to enhance the strawberry flavor. This will also intensify the pink/red color!
- No salted butter. No worries, just add a bit of kosher salt to taste and use unsalted butter instead.
✨Variations
- Creamier. If you don't have milk on hand, feel free to just use half and half or heavy cream instead.
- Use different sweeteners. Make strawberry honey butter by swapping honey for powdered sugar, like in our whipped honey butter recipe! You can also make strawberry maple butter, by using maple syrup instead of powdered sugar.
- Add lemon. Strawberry and lemon are a perfect combo. Add a bit of fresh lemon juice and lemon zest for a delicious citrusy flavor.
- Use other berries. Feel free to swap out strawberries for your favorite berry, and make raspberry butter, blueberry butter, or any variation you like. Try our blueberry butter!
- Low carb/keto friendly. Simply swap the regular confectioners' sugar for your favorite sugar free version.
- Vegan or dairy free. Swap the regular butter for your favorite vegan butter, and be sure to use a milk substitute instead of regular dairy milk.
🔪Prep work
- Let the butter sit out for at least an hour, preferably even a few hours so that it's nice and soft.
- Wash and dry the strawberries very well, and make sure they have a chance to sit out for a while as well. We don't want the strawberries to be cold, or else they will cause the mixture to seize up.
- Be sure to let the milk sit out at room temperature for 30 minutes to an hour.
- After the strawberries are at room temperature, cut the tops off. If you don't have a food processor, you will want to cut them up into small pieces. If you will be using a food processor, just quarter them or cut them in half.
- Measure the powdered sugar and vanilla if desired.

Add the softened butter and powdered sugar to a large mixing bowl.
Start out by beating on low speed with a hand mixer or in a stand mixer with the whisk attachment, then increase to medium speed until combined, smooth, and fluffy, about 2-3 minutes. (Image 1)
Use a food processor or a sharp knife to cut the strawberries into small pieces. (Image 2)

Add the vanilla bean paste or extract and the strawberries to the butter and powdered sugar mixture. (Image 3)
Mix until light and fluffy, about 2-3 minutes, slowly adding in milk as needed (or if desired) to make the mixture fluffier. (Image 4)
⭑Pro tip: If the strawberries or milk are too cold, it will cause the mixture to seize up. If this happens, place the entire mixture in the microwave for one or two 10-second increments just to get it warm enough to come together again. There may be small pools of melted butter, but it will all whip up once you get mixing again.
