Strawberry Butter

This delicious Homemade Strawberry Butter tastes like strawberry shortcake, and is made with only 5 ingredients! Elevate toast, bagels, muffins, pancakes, and more with this fluffy, spreadable butter!

Equipment

  • hand mixer (or stand mixer with the whisk attachment)
  • food processer (not 100% necessary but will speed up the process!)

Ingredients

  • 1 cup salted butter softened (2 sticks)
  • 3-4 tablespoons powdered sugar to taste (about 21-28g)
  • 16 large strawberries room temperature, with the tops removed and quartered or chopped into small pieces (roughly 250-300g)
  • 2 teaspoons vanilla bean paste (can sub vanilla extract 1:1)
  • 1-2 tablespoons whole milk room temperature, as needed

Instructions

  • Add the softened butter and powdered sugar to a large mixing bowl. Start out by beating on low speed with a hand mixer or in a stand mixer with the whisk attachment, then increase to medium speed until combined, smooth, and fluffy, about 2-3 minutes.

  • Use a food processor or a sharp knife to cut the strawberries into small pieces.

  • Add the vanilla bean paste or extract and the strawberries to the butter and powdered sugar mixture. Mix until light and fluffy, about 2-3 minutes, slowly adding in milk as needed (or if desired) to make the mixture fluffier.

  • Now just serve and enjoy! It's great on toast, pancakes, English muffins, and so much more.
  • Store leftovers in an airtight container in the fridge and use within 4 days. You can also wrap the butter tightly in plastic wrap and store it in the freezer for up to 6 months. Thaw it overnight in the fridge.

Notes

  • Make sure the butter is really soft. For fluffy, spreadable butter you'll want the butter to be very soft! Not melted, just very soft.
  • Use room-temperature strawberries and milk! This is really important. If your strawberries or milk or too cold, this will cause the butter to seize up and it won't be nice and fluffy. If it does seize up, it can be fixed, however! Just pop the bowl into the microwave for about 10-20 seconds in increments, then continue mixing until soft.
  • Sweeten to taste. Start with less powdered sugar, and add more to taste if desired.
  • Use salted butter. If possible, using salted butter will really round out the flavor of this butter. If you only have unsalted butter, don't worry! Yo can just use a pinch of salt.
