🍓Ingredients
Here are the ingredients we used for this recipe. You can find more information for substitutions below.
- Strawberries. Fresh or frozen will work fine. Just make sure to choose strawberries with no blemishes or bruises. If using frozen berries, there's no need to thaw them.
- Water. Use filtered water if possible for the best flavor.
- Sugar. White granulated sugar will work best for this recipe. Caster sugar, turbinado, or demerara sugar will also work well.

🔪Prep work
- Remove the tops off of the berries and halve or quarter them, depending on the size of them.
- Measure out the water and sugar.
📋Instructions
Add strawberries and water to a large saucepan. (Image 1)
Bring the mixture to a boil, then immediately reduce to a simmer, and allow the mixture to simmer for about 20 minutes. (Image 2)
⭑Pro tip: You may need to add about ½ cup more water to the mixture by the end of simmering, as some of the liquid will evaporate.
Strain the liquid out from the strawberries into a separate clean bowl using a fine mesh sieve. (Image 3)
⭑Pro tip: We know it's tempting to press on the berries to get out every last drop of juice - but we don't recommend doing this because it will make your syrup cloudy!
Add the strawberry water back to the saucepan over low heat, then, add in the sugar and stir to dissolve. (Image 4)
Continue stirring until dissolved, and if desired, add a few drops of red food coloring for an extra vibrant color! (Image 5)
This is completely optional but looks great when we make strawberry milk for our strawberry latte!
Now, transfer the syrup to a clean container, and let it cool completely before using it. Enjoy!
✨Tips & tricks
- Simmer the strawberries gently. After bringing the mixture to a boil initially, you want to immediately reduce the heat to a simmer. We don't want to break down the berries too much but rather extract the juice to give the syrup a great strawberry flavor.
- Don't press on the berries when straining. When straining away the excess water from the berries, resist the urge to press on the berries, because this will just make your syrup cloudy, as solid pieces of the fruit will make their way into the syrup itself. Just let the berries drain completely, then discard them.
- Add excess water if it evaporates too much. You can always add a bit more water to the mixture if a lot of it evaporates when simmering.
- Sweeten to taste. If you like a thicker, sweeter syrup, just add a bit more sugar.
- Enhance the strawberry flavor. For a more pronounced strawberry flavor in the syrup, feel free to simmer more berries at once!
- Make sure to store leftovers in a clean container. Storing the syrup in a clean container is really important to ensure there is no bacteria growth. This will prolong the life of your syrup!

💭Frequently Asked Questions
Store leftovers in the fridge in a sterile, airtight container for at least up to 2 weeks. It will probably last up to 1 month. If there are any signs of discoloration, an off-odor, or mold growth, get rid of it immediately! You can keep it in a freezer-safe container in the freezer for up to 1 year, then thaw it overnight in the fridge!
It's possible that the syrup can last even longer by adding a small splash or vodka or another neutral spirit. Just don't add too much, or your strawberry syrup might start to taste more like liquor!
If you want to make a syrup that's diabetic-friendly or is lower in calories, it's easy! Just Swap the sugar for allulose sweetener, or your favorite sugar replacement.
We find that allulose is best for syrups and sauces because it won't crystallize when it's stored in the fridge. If using allulose, you will need to use about ⅓ more than you would sugar, because it's slightly less sweet than sugar.

Strawberry Simple Syrup
Equipment
- Saucepan
Ingredients
- 1 cup filtered water 240ml (or more as needed if water evaporates)
- 2 cups strawberries tops removed, and quartered or halved, 288g
- 1 cup granulated sugar 200g
- Red food coloring (optional!!)
Instructions
- Combine strawberries and water in saucepan over medium heat. Bring to a boil, then immediately reduce the heat to low to simmer the mixture for 15-20 minutes, stirring every so often.1 cup filtered water, 2 cups strawberries
- After simmering, strain liquid into a separate container using a fine mesh sieve. Discard the berries, and DO NOT press on the berries to release more juice! This will make your syrup cloudy.
- Add the strawberry juice back into the saucepan over low heat. Add more water if a lot evaporated, remember, we want roughly a 1:1 ratio of water to sugar for a classic syrup.
- Add in the sugar, and stir to dissolve.1 cup granulated sugar
- If desired, you can add a few drops of red food coloring for a more vibrant color! We like to do this when making the syrup for strawberry lattes, but it is definitely not necessary. Allow the syrup to cool off completely before adding it to drinks, or it will melt your ice. Enjoy!Red food coloring
