- Lavender simple syrup. Can be made at least 2 weeks in advance and stored in the fridge. If making the syrup on the day of, be sure it has enough time to cool down, or else it will just melt all of the ice, which will water down your drink.
- Lemon juice. Make sure it's freshly squeezed! There are only a few ingredients in this recipe so they all have a big impact on the flavor. Freshly squeezed lemon juice is the only way to go here.

Make the lavender simple syrup
Make the syrup up to 2 weeks in advance and store it in an airtight container in the fridge.
To make it, combine water, culinary lavender buds, and butterfly pea flowers in a pot with water. Bring to a boil, then reduce to a simmer, then add in a squeeze of lemon juice to bring out the bright purple hue from the butterfly pea flowers.
Strain the solids away and discard, then add the liquid back to a pot add in sugar, and stir to dissolve. (Image 1) Allow the syrup to cool down completely before moving on!

Make the lemon water
Next, juice the lemons (Image 2), and strain away the seeds. (Image 3)

Add lemon water to an ice-filled glass. (Image 5)

Lavender simple syrup
- 1 cup water
- 1.5 tablespoons dried culinary lavender buds
- 1 tablespoon butterfly pea flowers optional, to give the syrup a purple hue
- 1 teaspoon fresh lemon juice
- 1 cup sugar 200g
Lemon water
- 1 ¼ cups fresh squeezed lemon juice 10 ounces
- 4 cups cold water
Instructions
Lavender simple syrup
- Add the water, lavender, and butterfly pea flowers to a pot. Bring to a boil, then immediately reduce to a simmer for 5-10 minutes. Add in the optional squeeze of lemon to make the water turn from blueish to purple!1 cup water, 1.5 tablespoons dried culinary lavender buds, 1 tablespoon butterfly pea flowers, 1 teaspoon fresh lemon juice
- Next, strain the lavender water mixture into a separate container through a metal sieve. Discard the flowers. Add the lavender water mixture back to the pot over low heat. Add in the sugar, and stir until the sugar dissolves, then remove it from the heat. Allow it to cool down completely before adding this drink.1 cup sugar

- Combine lemon juice and cold water in a pitcher, and stir to combine.1 ¼ cups fresh squeezed lemon juice, 4 cups cold water
