🪻Ingredients
Here are the ingredients we used for this recipe. You can find more information for substitutions below.
- Fresh lemon juice. It has to be fresh, no exceptions here!
- Homemade lavender syrup. This syrup can be made well in advance and stored in the fridge or freezer until it's time to mix up the drinks. Make sure it has time to cool down before making drinks so that you don't melt your ice!
- Botanical gin. Our favorite gin is Empress 1908 Gin. It's delicious, and the color works perfectly for this lavender drink. Empress has a distinct flavor and is distilled with butterfly pea blossom, Fairmont Empress tea, juniper, grapefruit peel, coriander seed, cinnamon bark, rose petal, and ginger root.
- Raw egg whites. Use high-quality eggs, wash them off, make sure they aren't cracked, and keep them very cold until time to use them.

✨Substitutions & Variations
Here are a few suggestions on additional flavors to try, or simple variations to this recipe.
- Vegan. Swap the egg white for 2 tablespoons of aquafaba, which is the liquid from canned chickpeas to give this drink a delicious foamy top.
- Mocktail. Omit the gin, and replace it with your favorite non-alcoholic gin, or just water!
- Sugar-free. If you want to cut back on sugar, are diabetic, etc. you can swap the lavender simple syrup for our sugar free lavender simple syrup!
- Make it a lavender Collins. Ever had a Tom Collins? The flavor is similar, but you will skip the egg white, and top with club soda instead.
- No Empress gin? Just use your gin of choice.
- Swap the liquor. This drink would also be delicious with vodka if you prefer!
- Add complexity. Add a dash of lavender bitters to the cocktail shaker for an even more complex, delicious flavor.

Lavender simple syrup
Lavender simple syrup can be prepared ahead of time and stored in the fridge for up to two weeks in an airtight container for convenience!
Start by combining water, dried lavender, and (if you want an extra pop of color) a few butterfly pea flowers in a pot. Bring the mixture to a boil, then reduce the heat to a gentle simmer. For a vibrant purple hue, squeeze in a bit of fresh lemon juice.
Once the flavors have infused, strain out the flowers and discard them. Return the lavender-infused liquid to the pot, keeping it on low heat, and stir in the sugar until it’s fully dissolved. (Image 1) Allow the syrup to cool completely before using it to mix up your favorite drinks!
Dry shake
Pour lemon juice into the bottom of a cocktail shaker with no ice. (Image 2)
Add in lavender simple syrup, (Image 3) followed by the Empress gin, and watch the color transform! (Image 4)
Add in the egg white (Image 5) and shake vigorously for 30 seconds with no ice, until a nice frothy foam forms. (Image 6)
Then, add ice and shake again to chill.
Serve
Strain into your favorite chilled cocktail glass, like a coupe glass.
Garnish with more edible lavender if desired, and enjoy!

Our tips are to use the highest quality eggs you can find, wash them off, and keep them really cold before consuming. You don't want them to come to room temperature as this will breed more bacteria.
- Cool the simple syrup. Make the lavender simple syrup in advance to allow it time to cool, or else it will melt the ice!
- Use fresh lemon juice. There's just no exception for fresh lemon juice in this recipe considering there are so few ingredients!
- Chill the glass. Chill your serving glasses in the freezer for a few minutes before serving. This will help keep your drink colder for longer and is especially important because we aren't serving this drink over ice.
- Use fresh ice. Ice that has been in the freezer for a while can start to taste like whatever is around it because it begins to absorb odors. For a great-tasting drink, use fresh ice!
- Balance the flavors. Lavender can have a strong aroma and flavor, so adjust the amount of simple syrup to taste. If making this for the first time, start with a little and add more if you want more.
- Double-strain the cocktail. This will remove any lemon solids and chunks of egg for a smooth texture to the drink.

We don't recommend fully preparing this drink ahead of time, but you can prepare the lavender simple syrup up to 30 days in advance and store it in the fridge.

Lavender Gin Cocktail (Gin Fizz)
Ingredients
Lavender simple syrup
- 1.5 tablespoons dried culinary lavender buds
- 1 tablespoon butterfly pea flowers optional, gives the syrup a natural purple color!
- 1 cup water
- 1 teaspoon freshly squeezed lemon juice optional, reacts with the butterfly pea flowers to lighten the color of the syrup
- 1 cup sugar 200g
Lavender gin fizz
- ½ ounce lemon juice
- 1 ounce lavender simple syrup
- 1.5 ounces gin
- 1 whole egg white
- Ice for the cocktail shaker
- Garnish with lavender buds
Instructions
Lavender simple syrup
- Add the water, lavender, and butterfly pea flowers to a pot. Bring to a boil, then immediately reduce to a simmer for 5-10 minutes. Add in the optional squeeze of lemon to make the water turn from blueish to purple.1.5 tablespoons dried culinary lavender buds, 1 tablespoon butterfly pea flowers, 1 cup water, 1 teaspoon freshly squeezed lemon juice
- Next, strain the lavender water mixture into a separate container through a metal sieve. Discard the flowers. Add the lavender water mixture back to the pot over low heat. Add in the sugar, and stir until the sugar dissolves, then remove it from the heat. Allow it to cool down completely before making this drink.1 cup sugar
Lavender gin cocktail
- Add lemon juice, lavender simple syrup, gin, and an egg white to a cocktail shaker with no ice. Shake vigorously for 30 seconds to create a foamy top.½ ounce lemon juice, 1 ounce lavender simple syrup, 1.5 ounces gin, 1 whole egg white
