- Eggs - We've heard that eggs that are a few days old peel easier, but to be honest we're not sure if this makes a difference or not. We do recommend using high quality eggs if at all possible, since these will yield the best results!
- Dry seasonings - Kosher salt and black pepper are staple of course. We like to add a little smoked paprika and cayenne as well.
- Mayonnaise - Something high quality here. We LOVE this delicious Japanese mayonnaise. If you're looking for an avocado oil based mayonnaise with minimal ingredients, try this one!
- Vinegar - We used apple cider vinegar, but you can also use red wine vinegar or champagne vinegar.
- Dijon mustard - For the perfect zing. You can also use a little yellow mustard if you prefer.
- Fresh herbs - Garnish to your heart's desire here. Some of our favorites to use are fresh chives, parsley, and dill! Green onions, microgreens, and basil are also wonderful additions.
- Crispy bacon and prosciutto - Optional, but highly recommended!
Pro tip: High-quality eggs and mayonnaise make a WORLD of difference here, considering they make up such a large part of the flavor!
💭Variations & substitutions
Here are a few tips and tricks for making substitutions and variations for these keto deviled eggs.
- Sour cream or plain greek yogurt - Tangy, and creamy if you're not huge on mayonnaise.
- For a dairy free substitute that isn't mayonnaise - Try using coconut or cashew cream, mixed with a little bit of lemon juice, olive oil, salt, pepper, and other desired seasonings.
- Spicy - Add your favorite hot sauce, top with your favorite spicy pepper, like jalapeño or Serrano.
- Add avocado - Want more creaminess and healthy fats? Try mixing in some avocado for extra nutrients and flavor.
- Switch up the citrus - Try adding some lime or lemon juice for a tasty zing.

- Cook bacon and prosciutto if using ahead of time, and cut or crumble into bite-sized pieces.
- Prepare the hard boiled eggs your favorite way. We're including standard stove top directions, but we've heard that some people love to use their instant pot or air fryer.
Place the eggs in a saucepan and cover with 1-2 inches of water. Put the saucepan over high heat and bring it to a rolling boil. Add in about a teaspoon of vinegar and a pinch of salt if desired. This technique is thought to help make the eggs easier to peel.
Once boiling, cover, then turn off the heat. Let the eggs sit for 10-15 minutes, depending on how done you like the yolks to be. After the time is up, remove the eggs from the hot water using a slotted spoon. Gently place eggs in an ice bath, and allow to sit for 15 minutes.
After 15 minutes, tap the egg on all sides to break the shell. Return the eggs to the cold water bath for another 10 minutes. This trick allows the water to come in between the shell and membrane, making them very easy to peel.
Once the eggs with the cracked shells have sat for another 10 minutes, peel them. Rinse them again in cold water to ensure there are no pieces of shell on the outside.
Cut the eggs in half lengthwise, and using a small spoon, gently scoop out the eggs yolks to remove them from the egg whites. Place the white halves on a plate and set aside, while adding the egg yolks to a small bowl.
To a bowl, add mayonnaise, herbs, vinegar, dijon, salt, pepper, smoked paprika, and cayenne to the egg yolks. Mash the yolks with a fork or whisk until very smooth. This will take a couple of minutes.
After the egg yolk mixture is smooth, add it to a clean piping bag, or a plastic bag with the corner of the bag snipped off. Pipe the yolk mixture gently into the egg white halves.
Top with crispy prosciutto, bacon, herbs, and seasoning if desired. Enjoy!

Keto Deviled Eggs
