We love a delicious tomato and basil moment, and if you add peaches in there, we're really in business! Since cottage cheese is having a moment right now (rightfully so!) we wanted to highlight how versatile and nutritious it is in this recipe. This dish is kinda like if our whipped ricotta and burrata caprese came together with a few delicious extras.
We're super into this caprese-ish whipped cottage cheese. It's rich and creamy, herbaceous, a little sweet, a little spicy, with just the right amount of acidity and a hint of truffle too.
This salad is the higher protein, lower-calorie version of some of our burrata recipes, like this burrata and prosciutto salad, or this burrata salad with pesto dressing, and it's just luscious.
Serve it with some crusty grilled bread to dip, you're in for a truly satisfying and refreshing lunch!

🍑Ingredients
Here are the ingredients we used for this recipe. You can find more information for substitutions below.
- Tomatoes. Use the sweetest, ripest tomatoes you can find. We're making this with some beautiful heirloom tomatoes that were available to us, but cherry tomatoes, or any variety of tomato you like works great.
- Peaches. Look for a peach that's nice and ripe but not overly soft or with blemishes.
- Cottage cheese. Full-fat or 4% large curd cottage cheese is going to give you a really creamy and delicious result.
- Truffle oil or olive oil. Truffle oil (or olive oil infused with truffles) is totally optional, but it adds a really delicious and distinct flavor to the dish, that is if you enjoy truffle! Olive oil works completely fine. P.S., if you enjoy truffle flavor, make sure to check out our truffle mashed potatoes!
- Truffle salt or kosher salt. Again, if you like truffle flavor, add this truffle salt, but kosher salt or sea salt work just fine!

✨Substitutions & Variations
Here are a few suggestions on additional flavors to try, or simple variations to this recipe.
- No fresh peaches. If fresh peaches are out of season, you can thaw some frozen peaches, use canned peaches, or just omit them entirely. If you omit them, feel free to add a little extra honey for more sweetness. We've made this salad many times and it's truly delicious with or without peaches.
- Swap the fruit. Alternatively, you could swap peaches for nectarines instead of peaches if you'd like.
- Lower calorie. While we do recommend using full-fat (4% large curd) cottage cheese for maximum creaminess and flavor, you can make it a bit lighter by using a lower-fat variety of cottage cheese instead if you prefer.
- Adjust the spice level. If you're not a fan of spice, you can omit the red pepper flakes entirely, or just add a small amount. We think this dish is the perfect balance and not *spicy* but, some people may disagree with us, so do what works for you!
- Add prosciutto! For even more flavor and protein, you could also serve this recipe with prosciutto. This crispy prosciutto would be a fun way to add some extra crunch.
- Swap honey for hot honey. A little sweet and spicy addition is welcome here, and we know it would taste great! Try our hot honey sauce with this dish or use storebought.

- Slice tomatoes however you prefer, then salt them and set them aside.
- Cut peaches into small chunks or slices.
- Zest a lemon.
- Wash, dry, and tear basil leaves.
- Measure out the remaining ingredients.

In a food processor or blender, add the cottage cheese, lemon juice, lemon zest, salt, pepper, red pepper flakes, honey, balsamic glaze, oil, and basil. (Image 1)

Spread the cottage cheese mixture on a serving platter or large plate. Top with the tomatoes, peaches, and torn fresh basil.
Garnish with more lemon juice, oil, salt, pepper, honey, balsamic, and red pepper flakes to taste.

- 3 cups large curd 4% milkfat cottage cheese
- 1.5 tablespoons lemon juice juice of ½ lemon
- 1.25 tablespoons honey to taste
- 1.25 tablespoons balsamic glaze to taste
- 1 tablespoon lemon zest zest of 1 lemon
- 1 tablespoon olive oil truffle oil is optional but recommended!
- ¼ teaspoon kosher salt to taste, truffle salt optional but recommended!
- ¼ teaspoon red pepper flakes to taste
- ⅛ teaspoon black pepper
- 4-5 leaves basil torn
To serve
- 1 large heirloom tomato chopped
- 1 medium ripe peach chopped
- Handful of fresh basil leaves torn
- ¼ teaspoon red pepper flakes to taste
- ⅛ teaspoon black pepper to taste
- ¼ teaspoon kosher salt to taste, truffle salt is optional but recommended!

Instructions
- Cut the tomatoes, and season with some of the salt. Set aside to draw out some of the water.1 large heirloom tomato, ¼ teaspoon kosher salt
Whipped cottage cheese
- Add the cottage cheese, lemon juice, lemon zest, honey, balsamic galze, olive oil, salt, pepper, red pepper flakes, and basil to a food processor. Food process until smooth and creamy.3 cups large curd 4% milkfat cottage cheese, 1.5 tablespoons lemon juice, 1.25 tablespoons honey, 1.25 tablespoons balsamic glaze, 1 tablespoon lemon zest, 1 tablespoon olive oil, ¼ teaspoon red pepper flakes, ⅛ teaspoon black pepper, 4-5 leaves basil
