- Line a baking sheet or baking sheet with parchment paper. We like to use a baking dish so that the balsamic glaze coats the salmon and kind of pools up around it and poaches the salmon while it bakes to infuse it with more flavor!
- Dry the salmon fillets really well with paper towel.
- Cut basil into thin strips (chiffonade).
- Quarter the tomatoes.
- Measure out all remaining ingredients.

In a bowl, combine olive oil, honey, balsamic glaze, lemon juice, lemon zest, and grated garlic. (Image 1)
Whisk very well until completely combined. (Image 2)
Next, season all sides of the salmon with salt, pepper, Italian seasoning, and red pepper flakes. (Image 3)
Cover the salmon fillets very well with the balsamic glaze (Image 4).
Bake until the internal temperature reaches about 130°F, as it will continue to cook outside of the oven. This will take about 12-15 minutes. If you prefer a more well-done salmon, cook until it reaches 140°F, as it will reach a temperature of 145°F. (Image 5)

Place bread on a baking sheet, and drizzle with olive oil. Make sure each side of the bread slices has olive oil on them. (Image 6)
Broil on high and keep a very close eye on the bread until it turns a nice golden brown color. This should take about 5-7 minutes.
Immediately after it comes out of the oven, rub the bread with a garlic clove that has an exposed inside, then sprinkle the bread with a bit of salt. (Image 7)

- 1 teaspoon Italian seasoning

Salmon glaze

- 2 tablespoons balsamic glaze
- 2 tablespoons honey (make sure it's a runny variety)
- 1 tablespoon lemon zest (zest of 1 lemon)
- 1.5 tablespoons lemon juice (juice of ½ lemon)
- 2 cloves garlic, grated
Bread
- 16 ounces French bread, cut into slices) (baguette, French or Italian bread)
- 2-3 tablespoons olive oil (to drizzle)
- 1 clove garlic, sliced in half
- pinch of salt
Tomato topping
- 11 ounces cherry tomatoes, quartered
- 2 tablespoons basil ribbons (chiffonade)
- ¾ teaspoon kosher salt
- ¼ teaspoon red pepper flakes (optional and to taste)
- 1 clove garlic, grated
- 1 tablespoon olive oil
- 1-2 tablespoons balsamic glaze (to taste)
