    • Raspberries - You can use either fresh or frozen berries. 
    • Water
    • Sugar
    • Lemon juice - Technically optional, but adds a nice tanginess to this sweet topping.

    ✨Substitutions & variations

    Here are a few suggestions on additional flavors to try, or simple variations to this recipe.

    • Make a keto friendly version. We love making a sugar free version of this sauce from time to time by using a sugar substitute like Swerve confectioners or allulose sweetener. 
    • Add extra berries. Mix in more berries like blueberries, blackberries, or strawberries for an easy fruit compote with multiple berries. 
    • Add extracts. For an added depth flavor, mix in some vanilla extract, almond extract, or orange extract.
    • Swap the citrus. Add some fresh orange juice or a little orange zest.
    • Less sugar. Sweeten to taste! If you want something that has less sugar, feel free to taste as you go and adjust accordingly. 
    • Use a different sweetener. Make this recipe refined sugar free by sweetening with honey, maple syrup, or agave. You can change up the flavor profile by sweetening with brown sugar as well.  
    • Smoother sauce.  You can use a food processor or blender and process or blend on medium speed until smooth. You can also take a fine mesh sieve to get rid of the raspberry seeds.

    • Wash raspberries.
    • Juice the lemon.
    • Measure out the water and sugar.

    Simmer over medium-low heat until the berries begin to break down, and stir. (Image 2)

    Continue cooking, stirring every so often for the next 15-20 minutes. The mixture should thicken considerably. (Image 3)

    Stir to incorporate, and that's it! (Image 5) Allow the compote to cool before using. It will continue to thicken as it cools.

    ✨Pro Tip: Depending on your stove, it may take more or less time for the mixture to thicken. Simmer until the compote reaches your desired consistency.

    ✨Tips & tricks

    • Don't overcook the berries. We want the mixture to be a little chunky still. Cook until thickened, stirring every so often, and then remove it from the heat.
    • Add lemon juice later. This will help the berries retain a vibrant color.
    • Sweeten to taste. Add more sugar to suit your personal preferences, or start with less, then add more if you like.

    What is the difference between raspberry coulis and raspberry compote?

    Compote is made of fresh fruit that has been cooked down into a chunky, thick sauce with sweetener, traditionally sugar. 

    A raspberry coulis is a compote that has the raspberry seeds removed and then pureed. Strain the seeds through a fine mesh sieve, and then puree the mixture in a food processor or blender on medium speed until smooth.

    How to store the leftovers?


    Store leftovers in an airtight container in the fridge for up to 2 weeks. It can be stored in freezer-safe containers in the fridge for up to 6 months. This recipe is not suited to canning, as it doesn't contain enough sugar.

    Here's a few suggestions on how to use this raspberry compote.

    • 12 ounces raspberries (2 pints)
    • 6 tablespoons white sugar (¼ cup + 2 tablespoons)
    • 3 tablespoons water
    • 1 tablespoon lemon juice (optional)

    Instructions

    • Add raspberries, water, and sugar to a heavy bottom saucepan over medium-low heat. Simmer over medium-low heat until the berries begin to break down, and stir.
    • Continue cooking, stirring every so often for the next 15-20 minutes. The mixture should thicken considerably. Add fresh lemon juice to the mixture.
    • Stir to incorporate, and that's it! Allow the compote to cool before using. It will continue to thicken as it cools.

    Notes

    • Lemon juice is optional but does help balance out the sweetness of the compote. You also want to be sure to add it later, to help the color of the raspberries be nice and vibrant. 
    • Your compote may take longer to reach the desired consistency. Simmer gently on the stove, stirring every so often until the desired thickness is achieved
    • Sweeten to taste. Add more sugar to suit your personal preferences, or start with less, then add more if you like.
