    Keto Bacon Cheeseburger Casserole Recipe

    This Keto Bacon Cheeseburger Casserole Recipe will have everyone asking for seconds. Perfect for meal prepping for the week, especially when craving something more indulgent. It’s great for low carb and keto diets, gluten free, and can be made in one skillet, which means little cleanup. Perfect for when you have a craving for burgers!

    Ingredients:​

    • Ground beef
    • Avocado oil
    • Bacon bits 
    • Eggs
    • Heavy whipping cream
    • Tomato paste
    • Pink Himalayan salt 
    • Onion powder 
    • Garlic powder 
    • Ground black pepper 
    • Yellow Onion
    • Shredded Cheese (Colby Jack or Shredded Cheddar)
    • Serving suggestions: serve with pickles, lettuce, tomatoes, low sugar ketchup, mustard, homemade low carb thousand island dressing

    How to Make Keto Bacon Cheeseburger Casserole! ​


    • Preheat your oven to 350°F. Cut your onions into your desired size. We like medium sized strips or rounds for this recipe, but it's up to you.
    • Warm your cast iron over medium heat. Brown your beef in the cast iron with your avocado oil or butter and big pinch of salt and pepper, along with about half of your seasonings, reserving some for your egg mixture. Once beef is browned, add in your bacon bits to crisp up. Then, layer on your onions.

    • In a large bowl using your hand mixer, beat together your eggs, milk and cream, remaining seasonings, salt and pepper, and tomato paste. Then fold in some of the shredded cheese. Pour the mixture over top of the burger and onions. Sprinkle on the rest of your shredded cheese.

    • Bake for about 30 minutes at 350°F. You can broil on high at the end at the end if you want the cheese to get a little crispier on top. We love to serve this Keto Bacon Cheeseburger Casserole with our homemade thousand island dressing and other yummy burger condiments and dressings.

    Recipe Notes:

    This recipe has been updated, and we have updated from the original photos taken in 2016. It's a family favorite. Kids and adults alike will absolutely love this crave worthy cheeseburger skillet.

    Seasoning: Everything is sort of to taste in this recipe, and we recommend seasoning to taste. Start with a little less salt, then add more as needed. Everyone has different taste buds, and we would hate if you thought it was too salty!

    For the onions, if you prefer less of a "bite" to your onions, you could definitely soften them in skillet with your meat and bacon bits. This is a preference thing! We sometimes like a little bit of a "bite" from the onions, so we put them in raw, so that they cook down just a little bit.

    Milk: You can use just heavy whipping cream only for this Keto Bacon Cheeseburger Casserole recipe, but it definitely affects the calorie count as I'm sure you could imagine! We started buying Fairlife whole milk. It's lactose free, ultra filtered and only 6 net carbs per 1 cup. You can use something like that if you want!

    Bacon: The bacon bits are certainly a shortcut in this recipe. You could definitely cook up some bacon on your own, but it’s extra work that we don’t always find necessary. We find the best deals on bacon bits at Costco or Aldi, two of our most favorite grocery stores. We love to crisp these in the skillet after our beef is browned, but this is an optional step.

    Serve With: If you’re on a low carb or keto diet like we follow, some of our favorite ways to serve this is with burger toppings! We love whipping up a batch of our homemade low carb thousand island dressing, which kind of doubles as a very pickle forward big mac copycat type of sauce. We also love serving with pickles, iceburg lettuce, tomatoes, your favorite low sugar ketchup, mayonnaise, or really whatever you like.     Ingredients
      

    • 1.34 lbs ground beef
    • 1 tablespoon avocado oil or butter
    • 1 cup bacon bits (about 4 ounces)
    • 8 whole eggs
    • 8 ounces heavy whipping cream
    • 6 ounces tomato paste (1 small can)
    • 1 tablespoon pink Himalayan salt (or to taste)
    • 2 teaspoon onion powder (or to taste)
    • 2 teaspoon garlic powder (or to taste)
    • 1 teaspoon ground black pepper (or to taste) 
    • 100 grams about half of a medium yellow onion
    • 12 ounces shredded cheese of choice (like colby jack or cheddar), divided
    • Serve with pickles, lettuce, tomatoes, low sugar ketchup, mustard, homemade low carb thousand island dressing

    Instructions
