Here's What You Need For Low Carb Cheeseburger Casserole:

Ingredients:

  • 2 lbs ground beef (80% lean) 
  • 1 tbsp unsalted butter
  • 3 whole spring onions, white bulbs separated from the green stems. 
  • 1 cup bacon bits 
  • 8 whole eggs
  • 1 cup heavy whipping cream
  • 1 can tomato paste
  • 3 cloves of garlic 
  •  12 oz. shredded cheddar cheese, divided in half.

Here's How To Make Low Carb Cheeseburger Casserole:

Preheat your oven to 350°F. In a skillet, melt the butter, then brown your ground beef. You may want to drain the fat afterwards. We left it in, so the casserole didn’t stick to the pan and then we just discarded it later, but it’s up to you. Season the beef liberally with salt and pepper. 
While the beef is browning, prep your ingredients. Slice your onions into rings (or dice them), mince the garlic and spring onion green stems. 
After your beef is browned, place it in a casserole dish. First, put your onions over top of the cooked beef. *Side note, if you like your onions a little sweeter or more cooked thru cook them with the beef, we prefer ours with a little more of a “raw” flavor. 
Add the bacon bits on top of the onions. 
In a separate bowl, whisk together 8 eggs, the heavy whipping cream, tomato paste, and a pinch of salt and pepper. We used a hand mixer.
Next, fold in half of the shredded cheese (6 oz) the garlic, and green onion stems. 
Pour the mixture overtop of the beef, onions and bacon. Spread evenly. 
Now, just sprinkle on the rest of the cheddar cheese. 
Bake for 30-40 minutes until the cheese on top is golden brown. Serve hot and enjoy!

Ingredients

  • 12 oz shredded cheddar cheese
  • 3 cloves garlic
  • 3 whole spring onions (onion bulbs and green stems separated)
  • 1 cup bacon bits
Instructions

  2. While the beef is browning, prep your ingredients. Separate the green stems from the spring onion bulbs. Cut the onion bulbs into rings (or dice them if you prefer), and set aside. Mince your garlic. Set aside. Mince the green stems of the spring onion bulbs, set aside. 

  3. Place your cooked beef into a casserole dish. On top of the beef, add your onions. This is truly a matter of preference as well. We like our onions with a little more crunch and a stronger "raw" flavor in them, but if you want them sweeter and milder, you can brown them with the ground beef. 

  4. Next, layer on the bacon bits. 

  5. In a separate bowl, whisk together 8 eggs, the heavy whipping cream, tomato paste, garlic, and a pinch of salt and pepper. We used a hand mixer. 

  6. Then, fold in half (6 oz) of your shredded cheddar cheese, the green onion stems, and garlic. Mix well. Pour the mixture over top of the casserole, then sprinkle with the remaining cheddar cheese. 

  7. Bake in the oven for 30-40 minutes, until the cheese is golden brown on top. Serve hot!

(5 total carbs - 1 fiber = 4). 42 grams of fat, 43 grams of protein.
