In the mood for some major comfort food? This Gluten Free & Keto Salisbury Steak with Mushroom Gravy is so delicious, just like you remember! Start with some well seasoned beef patties as the base. Serve with a luscious brown gravy sauce with mushrooms and onions for an easy one skillet dinner.
As a kid, this was one of my most favorite dinners. Although, back then, it was a lot of frozen TV dinners while mom and dad worked late. This gluten free salisbury steak recipe is keto friendly, and totally easy to make. It tastes just like the original version!
Although it's not actually steak (we'll explain later) it's definitely one of our most favorite recipes ever. We season beef patties up really well, and then brown them in a hot cast iron skillet. The leftover pan drippings are used to make a luscious brown gravy and mushroom sauce. It's creamy, decadent and super easy to make! We love serving it over a bed of creamy mashed turnips. So good!

Ingredients:
For the patties:
- Ground beef - We use grass fed ground beef that’s 85% lean for this recipe. We like a little extra fat in the ground beef, because it adds a ton of flavor. You can use leaner versions of beef if you prefer.
- Pork "panko" - We love this pork panko, or breadcrumb style pork rinds! They’re great. If you don’t eat pork, feel free to substitute with an equal amount of almond flour. Either one will work really was as a gluten free and keto bread crumbs substitute.
- Egg - This helps bind the patties together, and adds moisture.
- Worcestershire sauce & Dijon mustard - The "secret sauce" of most Western comfort foods in our opinion.
- Ketchup - Use your favorite brand here of gluten free ketchup. We also opt for low sugar ketchup, since we eat low carb as well.
- Yellow onion - Make sure to dice them up or even mince them so they are well distributed throughout the meat mixture. You could always use onion powder if you prefer.
- Fresh garlic - Fresh garlic packs a huge punch of flavor, and we use it in nearly every savory dish (in some form) that we’ve ever made! Fresh is always best, but you could of course use garlic powder instead.
- Salt and pepper - Not much to say about this but fresh cracked black pepper and kosher salt are essential to seasoning these keto salisbury steaks!
- Olive oil - This will be used as the oil for cooking the hamburger steaks, because it has a higher smoke point than butter.
For the mushroom gravy:
- Unsalted butter - This is where the creaminess comes in! We add unsalted butter to the pan with the pan drippings for the base of the mushroom gravy.
- Beef Stock - You can use beef bone broth if want. It's an easy way to add extra protein and nutrients. Regular beef broth works well here too.
- Yellow onion & garlic - The base of any great gravy, in our opinion.
- Black pepper and kosher salt- To taste in the sauce.
- Worcestershire sauce & dijon - These are added to our gravy as well as the patties. They add that extra something you're wanting, trust us!
- Mushrooms- We use lots of baby bell mushrooms sliced thinly in the gravy. We absolutely love mushrooms, so this is a win for us. You can leave them out if you prefer, but what a bummer (in our humble opinion.)
- Parsley, black pepper and salt for garnish
** If you're dairy free, you can swap the butter for your favorite substitute, and the sour cream for full fat coconut milk probably. We haven't tried it ourselves, but we imagine it would be quite tasty.

How to Make Gluten Free & Keto Salisbury Steak:
- In a large bowl, mix together ground beef with all of the patty ingredients. Combine very well, until throughly mixed. Shape into oval like steak shapes. Set aside on a plate or baking sheet until ready to cook.
- Heat cast iron skillet (at least 10") over medium high heat. After hot, lower the heat to medium, then add olive oil to the pan, followed by the patties, in batches. Cook until browned on both sides, and the patties are cooked through. About 3 minutes on each side.
- After the patties are completely cooked, remove them from the skillet and set aside. Add butter to the skillet, along with the mushrooms and a pinch of salt. Cook until mushrooms are softened, about 5- 7 minutes. Add in the diced onion and cook until soft, which should take about an additional 5 minutes.
- Add in garlic and cook until fragrant. Stir in beef stock, Worcestershire sauce, and dijon mustard to warm through.
- Add in sour cream and stir continuously until a sauce forms. Adjust seasoning to taste. Add the patties back to the skillet, and spoon the mushroom gravy over the keto salisbury steaks. Garnish with parsley and fresh cracked black pepper.
What Is Salisbury Steak Made Of?
What is Salisbury Steak? Well, it's actually not steak, after all! It's basically seasoned hamburger meat, shaped into ovals and it resembles steak.
In general, the meat patties are seasoned with breadcrumbs or flour, onion, ketchup, egg, Worcestershire, salt and pepper. Normally this dish is cooked in a hearty brown gravy sauce with mushrooms, and served over mashed potatoes.
Is Keto Salisbury Steak Healthy?
In our opinion, yes! It is definitely hearty and comforting, but we find it to be healthy too. Especially after we get rid of the breadcrumbs and flour. You're left with a lot of whole ingredients (with the exception of the added condiments for flavor).
What To Serve With Keto Salisbury Steaks:
Serve these Keto salisbury steaks with anything you want. We love them with a side of creamy mashed turnips, these roasted carrots and radishes, garlic and lemon green beans, roasted cauliflower and asparagus with parmesan cheese and lemon or this rutabaga and cabbage hash with leeks and bacon.

Keto Salisbury Steak Recipe
Ingredients
For the patties:
- 1.34 pounds ground beef, 85% lean
- ½ cup pork panko (about 40 grams)
- ½ medium yellow onion, diced
- 2 cloves garlic, minced
- 1 whole egg
- 3 tablespoons sugar free ketchup (48 grams)
- 1 tablespoons Worcestershire sauce
- 2 teaspoons kosher salt
- ½ teaspoon ground black pepper
- 1 tablespoon dijon mustard
- 2 tablespoons olive oil, for cooking the patties
For the mushroom gravy:
- 4 tablespoons unsalted butter
- 16 ounces mushrooms, sliced
- ½ medium yellow onion, diced
- 3 cloves garlic, minced
- ⅓ cup beef stock or broth/stock of choice
- 1 tablespoon Worcestershire sauce
- ½ tablespoon dijon mustard
- ½ cup sour cream
- salt and black pepper to taste
- Garnish with parsley, optional
