    Sweet Brussel Sprouts with Bacon

    This Sweet Brussel Sprouts with Bacon is complete with bacon, goat cheese and a low carb cranberry sauce. The balance of sweet, savory, salty and fatty in this recipe will leave you super satisfied. Enjoy it on the holiday dinner table, or as an easy side to a weeknight meal.

    Ingredients:​

    • Brussels sprouts 
    • Olive oil 
    • Creamy goat cheese
    • Cranberry sauce of choice, here's our recipe
    • Bacon
    • pink Himalayan salt and black pepper, to taste

    Here's How To Make a Sweet Brussel Sprouts With Bacon:​


    Preheat your oven to 400°F. Rinse your Brussel sprouts with water, then cut the ends off and discard any browned bits. Slice your Brussel sprouts in halves or quarters (depending on size). Save all the loose pieces that fall off, those will get super crispy in the skillet.

    Place your Brussel sprouts in your cast iron skillet. Drizzle them with olive oil, and season liberally with salt and pepper. Then, crumble your goat cheese over the top of the sprouts.

    Take a spoon and spoon on cranberry sauce in small dollops over the top of your Brussel sprout and goat cheese.

    Slice your bacon strips into pieces, then gently lay them over the top of everything.

    Bake for 45-55 minutes, until everything is crispy enough to your liking!

    Ingredients

    • 1 lb brussel sprouts
    • 2 tablespoon olive oil
    • ½ cup cranberry sauce of choice
    • 4 oz goat cheese
    • ½ package bacon

    Instructions

    • Preheat your oven to 400°F. Rinse your brussel sprouts with water, then cut the ends off and discard any browned bits. 
    • Slice your Brussel sprouts in halves or quarters (depending on size). Save all the loose pieces that fall off, those will get super crispy in the skillet. Place your Brussel sprouts in your cast iron skillet. Drizzle them with olive oil, and season with some salt and pepper.
    • Crumble your goat cheese over the top of the sprouts. Take a spoon and spoon on cranberry sauce in small dollops over the top of your Brussel sprout and goat cheese. 
    • Slice your bacon strips into pieces, then gently lay them over the top of everything. Place the skillet in the oven, and bake for about 45-50 minutes. Ours took about 45 minutes.
    • Enjoy your Sweet Brussel Sprout with Bacon.

    Notes

    *Note about the Cranberry sauce: for this recipe we used 2 servings of our sugar free cranberry sauce. If you decide to use something else, be sure to calculate this into the macros.
    We cooked this recipe for about 40 minutes at a higher heat than we did in other recipes like this one, but this is mainly due to the large size of these Brussel sprouts. Small sprouts could probably be cooked for a shorter amount of time at lower heat.
