Here's What You Need For The Sweet and Savory Brussel Sprout Skillet:

Ingredients:

  • 1 lb brussel sprouts 
  • 2 tbsp olive oil 
  • 4 oz creamy goat cheese
  • 1/2 cup cranberry sauce of choice, we made this low carb version
  • 5 strips thick cut bacon

Here's How To Make The Sweet And Savory Sprout Brussel Skillet

Preheat your oven to 400°F. Rinse your brussel sprouts with water, then cut the ends off and discard any browned bits. Slice your brussel sprouts in halves or quarters (depending on size, ours were large so we did quarters). Save all the loose pieces that fall off, those will get super crispy in the skillet.
Place your brussel sprouts in your cast iron skillet. Drizzle them with olive oil, and season with some salt and pepper. Don’t go too heavy on salt, as the bacon contains a lot of that too.
Crumble your goat cheese over the top of the sprouts.
Take a spoon and spoon on cranberry sauce in small dollops over the top of your brussel sprout and goat cheese.
Slice your bacon strips into thirds, then gently lay them over the top of everything. 
Place the skillet in the oven, and bake for about 30-40 minutes. Keep an eye on everything, our brussel sprouts were big so it took a bit longer than usual to cook, about 45 minutes.

Recipe Notes

Macros: 6 servings, 195 calories per serving, 6 net carbs (8 total carbs* per serving - 2 g fiber = 6 net carbs), 14 grams of fat and 9 grams of protein. 

*Note about the Cranberry sauce: for this recipe we used 2 servings of our sugar free cranberry sauce, which adds 8 net carbs for the whole batch, or about 1.3 net carbs per serving.

We cooked this recipe for about 40 minutes at a higher heat than we did in other recipes like this one, but this is mainly due to the large size of these brussel sprouts. Small sprouts could probably be cooked for a shorter amount of time at lower heat. 

We calculated our macros using MyFitnessPal, and the brands you use will effect your macros as well, so make sure to track your own macros carefully.
