    Keto Cheeseburger - BBQ Bacon Cheeseburger

    This Keto Cheeseburger is a BBQ Bacon Cheeseburger with Jalapeños!     Ingredients:​

    • Cheddar Cheese
    • Roasted Jalapeños
    • Crispy Bacon
    • Roasted Red Onion
    • Pickle Slices
    • Salt & Pepper
    • Oil for frying the patties
    • Mayo or Butter for toasting the buns
    • Garnish with spicy homemade bourbon bbq sauce (sugar free bbq sauce)

    How to Make a Keto Cheeseburger with Bacon, BBQ Sauce and Jalapeños:

    If making your bbq sauce from scratch, start with this so it can simmer on the stove while you cook. The longer this sauce simmers the better the flavor becomes! You may need to add some extra water if it simmers for over 40 minutes, because some of it will evaporate.

    Preheat your oven to 375°F, and line two baking sheets with parchment paper. Cut your onions and jalapeños into rings, and sprinkle them with some salt, then put them on a baking sheet. On the other sheet, add your bacon. Bake in the oven for 15-20 minutes, until everything is cooked to your liking. Keep an eye on everything, since things can burn easily (especially the jalapeños!) We like ours a bit crispy so it's okay with us, but we imagine that some of you won't want your jalapeños too cooked.

    Preheat your cast iron skillet over medium heat until it's nice and hot. In a bowl, season your beef liberally with salt and pepper, then roll into 4 patties. Add a touch of oil to the skillet. We put two patties in the skillet at a time to avoid crowding the pan since we wanted a nice caramelized crust on the beef. Using your greased spatula and potato masher, squeeze your patties down to maximize the surface area that has contact with the pan to get a nice crust.

    When you flip them, immediately add your cheese so it can melt. Once the cheese is melted, remove the patties from the pan. If desired, you can add mayo to your SOLA buns add put them face down in the skillet so they get a little toasted.

    Once your burgers are cooked to your liking (we recommend cooking to an internal temperature of 160°F just to be safe), you can now start building your burger! Layer the top and bottom buns with bbq sauce, then place on your burger patty with cheese, then more bbq sauce! Now just add bacon, red onions, jalapeños, pickle slices and more bbq sauce to top if you like. We will never shame you for adding ketchup, mustard or even ranch to this keto cheeseburger too because that's just delicious! Go crazy, and enjoy it!

    Substitutions/Optional Ingredients:

    • Onions- You can sub red onion for your favorite variety!
    • Pickles- Leave off if you want, but it adds the perfect acidity.
    • Cheese- We love cheddar for it's bold flavor in this recipe, but American and Colby Jack make great options too!
    • Jalapeños- Too spicy for you? No worries, just leave it off!
    • Buns- If you can't get your hands on any Sola buns, we recommend crying for awhile until you feel better! haha kidding, bun-less or a lettuce wrap will do!
    • BBQ Sauce- Like we mentioned, you can use any story bought low carb bbq sauce you want.

    Toppings for the burger:

    • Lettuce
    • Mustard
    • Ketchup
    • Tomatoes
    • Ranch Dressing (don't judge us, it's good!)
    • Pickles
    • BBQ Sauce
    • Bacon
    • Cheese
    • Red Onions
    • Jalapeños

    The Sola Company - Unmatched in the Keto Space!

    We truly think the secret to an amazing keto friendly cheeseburger is the Sola Company burger bun! It's 6 net carbs for the whole bun. It's super flavorful, super soft, and the perfect vessel for this juicy bbq bacon keto cheeseburger! Products like these are what make a low carb lifestyle easy and fun, so we are so happy to represent them. SOLA makes a variety of products that we love, including bread, hot dog buns, hamburger buns, sweetener, granola, ice cream, and nut bars!

    We love using these buns for so many uses. If you're in a pinch or getting takeout, you can even order a burger and swap out the bun for one of these to cut back on carbs! We will say that these buns are protein and fiber rich, so they are certainly more filling than a regular bun. This is great for us, because it helps keep us on track from overeating. We rarely have more than one burger in one sitting!

    Sometimes people can find their nutrition facts to be a tad bit confusing, so we will break it down for you. Each bun (1 top and 1 bottom piece) has the following nutrition facts: 140 calories per bun, 8 grams of fat, 11 grams of protein, 17 total carbs, 10 grams of fiber and 1 sugar alcohol. Sola uses their own blend of sweeteners that does not impact blood glucose and is zero net carbs.

    One of the sweeteners used is something newer to the market called tagatose, which is a low-glycemic sugar found in dairy. Although it doesn't raise blood sugar levels or convert to carbs, the FDA doesn't recognize it yet, so it can be included as a sugar alcohol. This is how SOLA buns are only 6 net carbs per bun. You subtract the fiber (10 grams) and the sugar alcohol (1 gram) from the total carbs (17 grams) making the whole bun 6 net carbs.

    You can order Sola online or use their store locator to find a location to you. If you're ordering online, the products will come to you frozen. Keep them in the freezer if you're ordering in bulk, and just thaw as needed. Their bread and buns are shelf stable for about 2 weeks once thawed.

    The other component of this keto cheeseburger that was so delicious is our homemade sugar free bourbon bbq sauce! It's made with the Sola Company's sweetener blend, which measures and tastes just like sugar, without the calories.

    What BBQ Sauce Should I Use?

    Our spicy homemade bourbon bbq sauce is completely sugar free and keto friendly, since we make it with the Sola Company's sweetener! It really cuts down on the calories, and of course the carbs. This bbq sauce is only 3 net carbs per serving! If you don't like bourbon, you could simply leave it out and replace with equal parts water. This bbq sauce will keep in the fridge for 10-14 days, so don't worry if there's extra! Our homemade bbq sauce is equal parts spicy, tangy, smokey, and boozy! You're definitely not missing any flavor here.

    Lately we've loved making our own bbq sauce because it's incredibly easy to make with just a few pantry staples and seasonings. We can completely control what goes into it, and it saves us money to make it ourselves! We tend to use dry seasonings for our sauce, because it's easier to control the texture and it cuts down on carbs. You could of course use real onion and garlic, but you will likely need to puree the sauce and then strain it before using. You might want to do this anyway, if you want.

    If you're in a time crunch or don't want to make your own bbq sauce, grab a bottle of your favorite low carb friendly store bought version, and that will do the trick! We've linked some of our favorite options in our Amazon Store. Just be aware that we worked our bbq sauce recipe into the macros for this recipe, so make sure to keep this in mind if you use something else.

    What is the best beef to use for burgers & how should I season them?

    You can use whatever you like for this burger. However, remember that 85% lean is probably perfect for the fat content that will keep your burgers juicy. Most people love ground chuck. Leaner cuts of meat will be drier, but you can use them if you want!

    To season these burgers, we kept it super simple with just salt and pepper. You can add your favorite seasonings, but we felt that we had enough flavor going into this burger with the bourbon bbq sauce, bacon, jalapeños, red onion and cheddar cheese. The bbq sauce itself has a lot of flavor. It's a little spicy actually, plus smokey and sweet.

    We do sometimes add things like Worcestershire sauce to our burgers, but just be aware this may increase the carb count. Some other great options to add to your burger patties would be garlic powder, onion powder, cayenne, red pepper flakes, smoked paprika, and more, especially if you like things to be kind of spicy! Standard mustard can also add a ton of delicious flavor to your patties.

    How to best fry your burger patties?

    You can easily make these keto cheeseburgers on the grill, or your stovetop! Whatever you prefer. We live in a small Chicago apartment with no access to a grill, so we use our cast iron skillet to make the perfect patties. Using a metal spatula sprayed with a little bit of oil so that the meat doesn't stick to the spatula when we are pressing it down onto the skillet will be helpful. You can also use something strong to help you press down on the spatula so the patty gets more contact with the grill, we use a potato masher and that works great! This saves your hands from getting too close and allows you to truly flatten your patty.

    • 4 buns Sola Company Burger Buns 
    • 1 pound ground beef
    • 4 slices sharp cheddar cheese
    • 1 whole roasted jalapeño
    • 8 slices crispy bacon

    • 1 tablespoon avocado oil (for searing the patties)
    • 6 tablespoon mayonnaise (for toasting the buns, could sub butter)
