When picking fresh pearl onions, kind in mind that they are often sold in mesh plastic bags or loose (by weight). You can find them where other onion varieties are sold in the grocery store.
Look for onions that are free from bruises, soft spots, mold, decay, or sprouting. Avoid anything that is sticky or moist in any way.

Place the peeled onion in a small dish, cover, and keep refrigerated until time to use! These will keep in the fridge for up to 5 days.

- 4 cups water (to cover and boil the onions)
- 6 cups cold water
- 3 cups ice
