This Chipotle Lime Shrimp recipe is an easy to make protein that’s perfect for any occasion. Whether it’s summer grilling or a quick dinner, you can make these scrumptious shrimp morsels in just a few minutes. Made with simple, clean, pantry ingredients, these paleo, keto, and Whole 30 friendly shrimp are spicy, bright and packed full of flavor and ready in under 15 minutes.
Start by thawing, peeling, and deveining the shrimp if necessary. We purchased our shrimp ready to go, so we were able to skip this step. Start by preheating your griddle or skillet. This whole process goes really fast, and we want the griddle to be nice and hot so we get some great grill marks on the shrimp!
In a large mixing bowl, combine your shrimp, avocado oil, lime juice, chipotle powder, smoked paprika, salt, pepper, onion and garlic powder. Use a rubber spatula to mix together well.
Now, skewer the shrimp. We recommend about four shrimp per six inch skewer to ensure an even cook. These go really fast. You really only need about 2 minutes per side until the shrimp are cooked thru and have some nice grill marks.
