Strawberry Goat Cheese Salad
This Strawberry Goat Cheese Salad is a lovely combo. Juicy, sweet strawberries, creamy goat cheese, basil, crunchy pecans, and cucumbers all topped off your favorite salad dressing!

- 5 ounces mixed greens (we used spring mix and arugula)
- fresh basil & oregano (optional)
- pinch of kosher salt & black pepper (to taste)
- 1.5 tablespoons shelled hemp hearts 15g
- ¼ large red onion thinly sliced
- 2 whole Persian cucumbers cut into rounds
- ½ cup chopped pecans
- 8 large strawberries or more, to taste
- 4 ounces creamy goat cheese crumbled
- 1 tablespoon honey optional and to taste
- Honey lemon dressing (or any dressing of choice, not included in the nutrition facts.)
In a large bowl or on a platter, add mixed greens, and herbs. Season with a pinch of salt and pepper. Add hemp hearts, and a bit of your desired dressing. Toss to distribute the ingredients.

Layer on the cucumbers, red onions, pecans, strawberries, hemp hearts, and creamy goat cheese.

Honey lemon dressing, 1 tablespoon honey
- Choose fresh, ripe strawberries. Choosing bright red strawberries that have no blemishes and are fresh will give you the best flavor for this recipe!
- Wash and dry your strawberries thoroughly. Washing and drying your strawberries beforehand will prevent them from wilting the greens and making them mushy.
- Season the greens. This is an often overlooked step, but this will help give more flavor to the entire salad!
- Don't dress the salad until ready to serve. If preparing ahead of time, don't dress the salad until ready to serve. You don't want to start or serve a salad with soggy greens.
- Soak the red onions in cold water. Soak the red onions for 5-10 minutes in water to reduce the sharp flavor and prevent it from overpowering the salad.
- Feel free to omit or add more of what you like. All ingredients are optional.
- We don't recommend dressing the salad if you anticipate leftovers. Store dressing and salad separately.
