Notes

  • Use raw egg whites safely. If you're nervous about consuming raw eggs, we'd recommend taking a look at this great guide for more information on consuming them safely. Our tips are to use the highest quality eggs you can find, wash them off, and keep them really cold before consuming. You don't want them to come to room temperature as this will breed more bacteria.
  • Cool the simple syrup. Make the lavender simple syrup in advance to allow it time to cool, or else it will melt the ice!
  • Use fresh lemon juice. There's just no exception for fresh lemon juice in this recipe considering there are so few ingredients!
  • Chill the glass. Chill your serving glasses in the freezer for a few minutes before serving. This will help keep your drink colder for longer and is especially important because we aren't serving this drink over ice.
  • Use fresh ice. Ice that has been in the freezer for a while can start to taste like whatever is around it because it begins to absorb odors. For a great-tasting drink, use fresh ice!
  • Balance the flavors. Lavender can have a strong aroma and flavor, so adjust the amount of simple syrup to taste. If making this for the first time, start with a little and add more if you want more.
  • Double-strain the cocktail. This will remove any lemon solids and chunks of egg for a smooth texture to the drink.
