Chocolate Cherry Frozen Yogurt Popsicles

Cherry popsicle base
- 3 tablespoons heavy whipping cream
- 2 cups vanilla Greek yogurt (use full-fat for the best texture)
- 2 tablespoons honey can sub sweetener of choice
- ½ teaspoon kosher salt
- ½ pound sweet cherries pitted and quartered
Popsicle mix-ins
- ½ pound sweet cherries pitted and quartered
- ½ cup dark chocolate chunks
Chocolate shell
- 8 ounces dark chocolate chopped
- 1 tablespoon coconut oil
Popsicles
Start by pitting the cherries and quartering the cherries. You can use a cherry pitter, or, just use a sharp knife to cut the cherry into quarters through the center. Pull the pieces away from the pit until you can remove the pit. Separate the cherries roughly in half in two separate piles.
½ pound sweet cherries
Place the Greek yogurt, heavy cream, honey, kosher salt, and cherries in the blender. Blend until smooth.

In the bottom of your popsicle molds, add the chocolate chunks and most of the remaining cherry pieces. Pour in the blended cherry yogurt mixture, then add any remaining cherry pieces on top. Place the lid on top, then press in the popsicle sticks.

Freeze the popsicles for at least 4 hours, preferably 8 hours, or until they are completely frozen solid. After the popsicles have been frozen completely, remove them from the molds, and place them on a baking sheet lined with parchment paper. Freeze them again for an hour or so if you plan to add a chocolate shell.
Chocolate shell
Add chopped chocolate to a bowl with coconut oil. Melt in the microwave at 50% power in 20-30 second increments, stirring in between until completely melted.

Quickly drizzle or dunk the frozen popsicles into the chocolate with your desired design. Work quickly, then transfer the popsicles back onto a parchment-lined baking sheet, and freeze again until solid (about 10-15 minutes).
Serve and enjoy!
Store leftovers tightly wrapped in the freezer for up to 3 months. Before enjoying, take the popsicles out of the freezer for about 5 minutes before digging in, allowing them to soften slightly before enjoying.
- Remove all the pits of the cherries. It's important to make sure that the cherry pits are removed and not blended!
- Freeze completely. We know it can be a hassle to wait, but make sure you're freezing completely between each step or you'll end up with a melted, soupy mess instead of popsicles!
- Sweeten to taste. After blending the yogurt mixture, taste it, and adjust the sweetness to suit your preferences.
- For the chocolate shell, melt the chocolate gently! You want to be very careful when melting the chocolate, so melt on a lower power, in short bursts, stirring in between.
