- 1 ¼ cups fresh blueberries washed, and room temperature (about 210g)
- 1 cup salted butter softened, 2 sticks
- ¾-1 cup powdered sugar to taste, 86g-115g
- 1 tablespoon lemon zest zest of 1 lemon
- 2 teaspoons vanilla bean paste can sub vanilla extract 1:1
- 1-2 tablespoons whole milk room temperature if needed
Add the blueberries to a food processor, and puree until smooth with a few small chunks remaining. Set aside

Add softened butter to a bowl with the lemon zest and some of the powdered sugar. Beat the butter and powdered sugar mixture on low speed with a hand mixer or in a stand mixer with the whisk attachment, then increase to medium speed until combined, smooth, and fluffy. This should take about 2-3 minutes.

Add the blueberry puree, and vanilla to the whipped butter. Mix until smooth and fluffy, adding more powdered sugar or milk as needed to adjust the sweetness and consistency.

Store leftovers in an airtight container in the fridge and use within 4 days. Before using, let the butter sit out at room temperature to soften.You can also wrap the butter tightly in plastic wrap and store it in the freezer for up to 6 months. Thaw overnight in the fridge before using.
- Make sure the butter is really soft. For fluffy, spreadable butter you'll want the butter to be very soft! Not melted, just very soft, so ensure it sits out for a while for easy mixing.
- Use room-temperature blueberries and milk! For easy mixing, make sure the berries and milk are at room temperature to avoid letting the mixture seize up. This is important, although it can be fixed easily if the butter does seize.
- If your butter does seize, place it in a microwave-safe container and heat it in the microwave at 50% power for one or two 10-15 second increments to warm the butter back up. If the butter melts too much after warming it, then place it in the fridge or freezer so that it can quickly firm up again before whipping it again until smooth and combined.
- Sweeten to taste. Start with less powdered sugar, and add more to taste depending on your preferences.
