- 16 ounces ciliegine mozzarella balls
- 6 ounces extra virgin olive oil (¾ cup)
- 1 - 2 cloves garlic, grated
- ½ - 1 medium lemon, juice and zest
- 2 tablespoons fresh basil, minced
- 1 tablespoon fresh thyme, minced
- 1 tablespoon fresh parsley, minced
- 1 tablespoon fresh oregano, minced
- ½ - 1 teaspoon kosher salt
- ¼ - ½ teaspoon red pepper flakes
- ¼ - ½ teaspoon black pepper
Add mozzarella balls to large bowl with olive oil, lemon juice and zest, and fresh herbs. Toss to combine.
Grate in fresh garlic, then add salt, pepper, and red pepper flakes. Adjust seasonings to taste. Cover, refrigerate, and marinate for at least 30 minutes before serving, if possible. Marinating for 24 hours will yield the best results.
If the olive oil has had time to solidify in the fridge if stored for an extended period of time, allow the mozzarella to sit out at room temperature for about 30 minutes before serving, or until the olive oil has returned to its previous state.
Store in an airtight container in the fridge for up to 3 days. Do not freeze.

- Fresh herbs are best for this recipe, but dried can be substituted for fresh. To substitute for dried ingredients, use about 1 teaspoon of each herb in place of 1 tablespoon of fresh.
- Use bocconcini, ciliegine, or mozzarella pearls for this recipe.
- Add fresh herbs to taste, seasoning, garlic, and lemon to taste.
- For best results, allow the mozzarella to marinate in the fridge overnight or for 24 hours for an amazing depth of flavor.
