Air Fryer Fingerling Potatoes

- 2 pounds fingerling potatoes, halved lengthwise
- 3 tablespoons olive oil
- 2 teaspoons kosher salt (or to taste)
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 2 tablespoons fresh parsley, minced (optional)
- 3 tablespoons unsalted butter (optional)
- 2 ounces freshly grated parmesan cheese (optional)
Scrub potatoes very well, halve lengthwise but don't peel. Preheat your air fryer to 400°F, and prepare your air fryer basket or trays.
Toss potatoes with olive oil, salt, pepper, garlic & onion powder, and about half of the parsley. Mix well to fully combine. Add to air fryer trays or basket in a single layer. Bake for 20-25 minutes until golden brown, flipping halfway through.
When finished, drizzle with melted butter, parmesan cheese, salt, pepper, and fresh parsley. Enjoy!
Store in an airtight container in the fridge for up to 5 days. Reheat gently in the microwave or in the air fryer.
- Season to taste, and feel free to omit anything you wouldn't prefer.
- Some air fryers will need olive oil or parchment to prevent food from sticking. Our particular version has non-stick trays to place food on.
- Butter, parsley, and parmesan cheese are optional additions but are included in the nutrition facts. Feel free to omit if you prefer.
