Mango Cherry Popsicles (Sugar Free)

These cherry mango popsicles are the perfect sugar free and gluten free treat for the summer! These ice pops are made with only 4 simple ingredients. These frozen fruit, no added sugar treats will become a summertime staple!

Ingredients

  • 16 ounces mango, cut into chunks (about 2 mangos)
  • 16 ounces cherries, pitted
  • 2 ounces lime juice
  • 2 ounces sugar free simple syrup

Instructions

  • If making layered color popsicles: Add mango chunks, and half the lime juice and simple syrup to the blender. Blend on high until smooth, about 1 minute. Remove from the blender, clean it out, and set aside.
    To make single color popsicles: Simply blend all of the ingredients together in the blender to make a single color popsicle.
  • Next, blend the cherries with the remaining lime juice and sugar free simple syrup.
  • Now, pour purees into the popsicle molds, alternating colors to create a layer effect, or simply pour into molds if making single color.
  • Fill them just below the top of the mold, then add the silicone top. Insert popsicle sticks, leaving plenty of room to hold the popsicles later on when you remove them from the mold.
    You will want to make sure these freeze for at least 4-6 hours, preferably over night.
  • Once frozen, remove from the molds and enjoy! These will keep for months in the fridge.

Notes

 
  • To make sugar free simple syrup: heat up 1 cup of water in a sauce pan, bring to a boil. Remove from heat and stir in 1 & ⅓ cups allulose sweetener to dissolve. Allow to cool before adding to drinks. Store in definitely in a cool, dry place in an air tight container. 
  • Use any sweetener you prefer in place of sugar free simple syrup. 
  • Freeze the silicone popsicle molds on a baking sheet or even a deep baking pan to help stabilize them while they freeze.
  • Once completely frozen (about at least 4-6 hours) set the popsicles in the mold out at room temperature, or run under warm water for about 20 seconds to get the popsicle to easily release from inside the mold.
