  • 1 whole jalapeño, diced (optional)
  • 1 tablespoon Italian seasoning
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 2.5 teaspoons kosher salt (or to taste)
  • 2 teaspoons oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon cayenne pepper, optional and to taste
  • 2 tablespoons tomato paste
  • 1.34 pounds ground beef, 85% lean
  • 1 pound ground pork
  • 4 cups beef broth
  • 3 tablespoons Worcestershire sauce
  • 29 ounces diced tomatoes (about 2 14.5 ounce cans)
  • 32 ounces green cabbage, chopped (about 1 medium head of cabbage)
  • Fresh parsley, salt and pepper to garnish

Instructions

  • In a dutch oven over medium heat, melt the butter. Add in onion, bell peppers, and jalapeño with a pinch of salt. Cook until softened, about 5-7 minutes. After onions and peppers are softened, add in the dry seasonings and garlic. Cook until garlic is fragrant, about 30 seconds.
  • Add in the tomato paste and cook it deepens in color. About 2-3 minutes.
  • Add the ground pork and beef to the dutch oven with plenty of salt. Brown the meat, about 10 minutes.
  • Add in the beef broth, Worcestershire sauce, diced tomatoes, cabbage and some fresh parsley if desired. Bring to a boil, then reduce to a simmer, and cook for about 20-30 minutes until cabbage is softened. Dig in! Garnish with fresh parsley, green onions, cheese, sour cream, or anything you like.
  • Keto Cabbage Soup will keep in the fridge for up to 5 days in an airtight container. You can freeze for up to 6 months.
