Ingredients

  • ¼ cup fresh mango, cut into pieces (about 41 g)
  • 6-8 whole mint leaves
  • 3 ounces mango nectar
  • 1.5 ounces fresh squeezed lime juice
  • ½ ounces simple syrup
  • 2 ounces light rum
  • club soda
  • Ice cubes
  • limes wedges and mint for garnish

Instructions

  • Add mango, lime juice, mango nectar, and simple syrup to the bottom of a glass. Muddle to break up the pieces of mango.
  • Add mint leaves, then gently muddle (just a few turns) to release the flavor of the mint, but avoid bruising the leaves.
  • Add rum, then ice, and top with club soda. Stir.
  • Garnish with more mint leaves, lime wheels, and mango chunks. Enjoy!

Notes

  • Muddling technique. When muddling the mango chunks and mint leaves, be gentle but firm. Press and twist with a muddler or the back of a spoon to release the flavors without over-mashing the ingredients.
Fresh ingredients. Opt for ripe, juicy mangoes and fresh mint leaves to maximize the flavor of your mojito. Fresh ingredients will give you the best results for this cocktail.
  • Adjust sweetness and tanginess. Taste the mixture before adding the club soda and adjust the sweetness and tanginess to your preference. Add more simple syrup or mango nectar for a sweeter drink or squeeze in extra lime juice for a tangier kick.
  • Chilling the ingredients. Chilling the mango chunks, mango nectar, and club soda before making the mojito helps keep the drink cool and refreshing.
  • To make sugar free simple syrup: heat up 1 cup of water in a sauce pan, bring to a boil. Remove from heat and stir in 1 & ⅓ cups allulose sweetener to dissolve. Allow to cool before adding to drinks. Store indefinitely in a cool, dry place in an airtight container.
