Ingredients

  • 1 pound fresh green beans
  • 5 cloves fresh garlic, minced
  • 3 tablespoons olive oil (extra virgin)
  • 2 tablespoons lemon zest (zest of 2 lemons)
  • 6 tablespoons lemon juice (juice of 2 lemons)
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper to garnish
  • ½ teasppon red pepper flakes

Instructions

  • Prep the green beans by washing and patting them dry with a paper towel. Mince the garlic, cut your basil into ribbons, and half your lemons. Preheat the oven to 425°F.
  • On a baking sheet, toss the green beans with the lemon zest, half of the lemon juice, and the olive oil. Toss.
  • Season with the salt, black pepper, half of the basil, and the red pepper flakes and toss again.
  • Roast the green beans in the over for 10-15 minutes or until the green beans are cooked to your liking. We like ours with a nice crunch, but slightly softened.
  • Once the green beans are cooked, remove the baking sheet from the oven and stir in more fresh basil, along with the remaining lemon juice.
  • Top with lemon wedges and more red pepper flakes and lemon juice if desired and enjoy!
  • Store in an airtight container in the fridge for up to 3 days and reheat in the microwave.

Notes

  • Use fresh green beans - Choosing bright, green, and firm green beans will ensure the best flavor for this recipe. Avoid any that are damaged, discolored, or wilted for the fresh-tasting green beans.
  • Wash and dry - Washing your green beans and drying off the excess water with paper towels will give you the crispest result. Too much water can prevent them from roasting properly.
  • Store in an airtight container in the refrigerator for up to 3 days.
