Ingredients
  • 16 ounces asparagus (with the ends trimmed)
  • 2 tbsp olive oil
  • juice of 1 lemon + more for garnish
  • 3 tbsp fresh dill (Or to taste. See notes for dried dill or other herbs.)
  • 6 ounces goat cheese (or feta)
  • salt and pepper to taste
Instructions
  1. Preheat your oven to 375˚F. Wash your asparagus, and cut the ends off them. Place them in a cast iron skillet.

  2. Add olive oil, fresh lemon juice, dill, salt and pepper to a mixing cup or bowl. Whisk together.

  3. Crumble the creamy goat cheese over top of the asparagus.

  4. Drizzle the olive oil, lemon juice and herbs mixture over top. Add slices of fresh lemon if you want. Bake in the oven for 15-20 minutes, until asparagus is soft.
