Keto Glazed Carrots (Sugar Free Maple Glazed Carrots)

These Low Carb Maple Glazed Carrots are a delightful addition to your low sugar or keto diet. Coat some carrots with some sugar free maple syrup, butter, a few spices and herbs, roast them until tender and you have a delicious and well-rounded side dish for any occasion!

Ingredients

  • 2 pounds carrots, scrubbed and tops trimmed
  • 4 tablespoons unsalted butter
  • 8 tablespoons sugar free maple syrup (divided)
  • 1 tablespoon fresh thyme
  • 1.5 teaspoons kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes

Instructions

  • Preheat your oven to 400°F. Prepare a baking sheet or pan and add cleaned carrots to it.
  • Melt butter in a small bowl, and add salt, thyme, pepper, smoked paprika, and red pepper flakes. Mix to combine, then pour in 6 tablespoons of the sugar free maple syrup, reserving 2 tablespoons for the end.
  • Pour seasoned maple butter mixture over the carrots, coating well. Bake for 35-45 minutes until the carrots are fork tender, tossing halfway through to ensure the butter is covering all of the carrots.
  • Garnish with remaining maple syrup and enjoy!
  • These will keep in an airtight container in the fridge for up to 5 days.

Notes

  • Use whatever maple syrup or substitute you prefer, but know it will affect the macros.
  • All seasonings aside from salt and pepper are optional, and to taste.  
  • Feel free to substitute use your favorite herbs. Rosemary makes a fabulous option! 
  • For vegan or dairy free, substitute butter with vegan butter, avocado oil or olive oil.
