Ingredients

  • 12 ounces raspberries (2 pints)
  • 6 tablespoons white sugar (¼ cup + 2 tablespoons)
  • 3 tablespoons water
  • 1 tablespoon lemon juice (optional)

Instructions

  • Add raspberries, water, and sugar to a heavy bottom saucepan over medium-low heat. Simmer over medium-low heat until the berries begin to break down, and stir.
  • Continue cooking, stirring every so often for the next 15-20 minutes. The mixture should thicken considerably. Add fresh lemon juice to the mixture.
  • Stir to incorporate, and that's it! Allow the compote to cool before using. It will continue to thicken as it cools.
  • Serve with toast, pancakes, yogurt, french toast, or on your favorite baked goods. Enjoy!
  • Store leftovers in an airtight container in the fridge for up to 2 weeks. It can be stored in freezer-safe containers in the fridge for up to 6 months.

Notes

  • Lemon juice is optional but does help balance out the sweetness of the compote. You also want to be sure to add it later, to help the color of the raspberries be nice and vibrant. 
  • Your compote may take longer to reach the desired consistency. Simmer gently on the stove, stirring every so often until the desired thickness is achieved
  • Sweeten to taste. Add more sugar to suit your personal preferences, or start with less, then add more if you like.
