  • 2 large zucchinis, cut about ⅓-inch thick
  • 1 teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil (or avocado oil)
  • 1 medium lemon, zest (zest of 1 lemon)
  • 1 tablespoon lemon juice (juice of half a lemon)

Instructions

  • Preheat the air fryer to 400°F. Cut zucchini into ⅓-inch thick slices. Use paper towel to remove excess moisture from the zucchini.
  • In large bowl, toss zucchini together with salt, seasoning, lemon zest, lemon juice, and olive oil.
  • Working in batches, arrange zucchini in single layer in fryer tray or basket. Cook, flipping once, until golden brown about 11-13 minutes.
  • Sprinkle with lemon juice and serve with lemon wedges. Serve hot.
  • You can store these in an airtight container for up to 5 days in the fridge.

Notes

  • Serve with your favorite dipping sauce or condiment. These are great for any dip you are craving. Ranch dressing, garlic aioli, marinara sauce, and sriracha sauce are all great options to pair with this.
  • Season in different ways each time.  Zucchinis themselves don't have a lot of flavor, so feel free to adjust or use an entirely different blend for your desired taste. Italian, Mediterranean, Cajun, etc. You can also add parmesan cheese. 
  • Don't overcrowd the air fryer trays or basket. This may require cooking the zucchini in batches to ensure you can place the slices in a single layer with little to no overlap. Overcrowding will create mushy zucchini.
  • Dry the zucchini off with paper towels. This is another step that helps absorb excess moisture.
