White Chocolate Covered Strawberries

  • 12 medium strawberries, washed and dried
  • 6 ounces white chocolate melting wafers

Instructions

  • Line a baking sheet with parchment paper or wax paper. If using chocolate bars, chop them into small pieces.
  • In a microwave safe bowl, melt chocolate at 50% power in 15 second increments. Stir in between each interval for 15-20 seconds. 
  • Grab your dry berries by the leaves. Dip your strawberries about ½ to 3-quarters of the way.
  • Set your strawberries on your baking sheet with enough space between them, so they don't touch. Let them rest for 5-10 minutes until they harden. You can chill them in the fridge so they can harden quicker.
  • Top the strawberries with the remaining white chocolate and enjoy! If you have a piping bag, feel free to decorate it with a few designs like swirls.
  • Store leftovers in an airtight container in the fridge for up to 3 days.

Notes

  • Nutrition facts are for ONE white chocolate covered strawberry. 
  • Add coconut oil to your melted chocolate to make the consistency thinner if it is too thick.
  • Microwave at low heat to prevent the chocolate from melting completely. You want a little bit of thickness for it to stick to berries!
  • Make sure your strawberries are at room temperature when you dry and dip them. Otherwise, they may release water as they warm up, and be difficult to stick chocolate too.
  • If using white chocolate instead of melting wafers, be sure to add 1-2 teaspoons of coconut oil or another neutral oil when tempering the chocolate, as unlike wafers, there are no additives to help it melt better. 
  • We don't recommend using white chocolate chips, as they have stabilizers in them that prevent them from melting easily. 
  • Double boiler method for melting the white chocolate:
    • Fill a saucepan about ⅓ of the way full with water, and set a glass bowl overtop. You don't want the bottom of the bowl to touch the water, however.
    • Heat the water over medium heat, and bring the water to a simmer. Add in white chocolate pieces to melt, as the steam from the water will heat the chocolate gently. Stir constantly until melted.
