For the ham
- 8 pound ham (bone-in or boneless)
- 20 ounces pineapple rings (reserve 4 ounces of pineapple juice from the can)
- 18 small maraschino cherries (1 eight-ounce can)
- toothpicks for securing the fruit
For the glaze
- 2 tablespoons dijon mustard
- 4 ounces pineapple juice (reserved from the can)
- 2 ounces orange juice
- 8 ounces honey
- 2 tablespoons rum (optional)
- 2 tablespoons lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon allspice
- 1 teaspoon smoked paprika
- ½ teaspoon nutmeg
- ½ teaspoon ginger
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon cloves
- ¼ teaspoon cayenne pepper
Preheat the oven to 325°F.Score the ham with a diamond pattern to help the glaze get into every part of the ham. Cover the ham with pineapple rings and place a maraschino cherry in the middle of the ring, then secure using a toothpick.
Now, on the stovetop, make the glaze. Combine all the glaze ingredients in a large skillet over medium heat. Bring to a boil, then immediately reduce to a simmer, stirring until everything is incorporated. Cook for about 10 minutes, stirring often until thickened.
Place the ham in a roasting pan, and pour over the top of the ham, making sure to cover the whole ham. Let the glaze run down to the bottom of the roasting pan.
Cover ham tightly with aluminum foil in the roasting pan. Bake for 12-15 minutes per pound, (so about 2 hours for an 8-pound ham), basting the entire ham with the glaze at the bottom of the pan every 30 minutes or so. In the last 30 minutes, remove the foil to let the pineapples and glaze can caramelize. Let the ham rest for 20 minutes or so before cutting in. Serve with the reserved glaze.
Store in an airtight container for up to 5 days in the fridge. Reheat in the microwave or in the oven at a low temperature until warmed through. To freeze: Double-wrap leftover ham in plastic wrap. Store it in an airtight container or freezer bag and freeze it for up to 2 months. Thaw in the refrigerator.
- Sweeten to taste. If you prefer, you can always add more honey for a sweeter glaze.
- Season to taste. Feel free to omit seasoning, or rum as you see fit.
- Omit maraschino cherries if desired.
- Keeping the ham juicy. It’s best to cook ham slowly at a lower oven temperature to keep it from drying out. Make sure the ham is tightly wrapped with aluminum foil.
- Serve with glaze. Any leftover glaze can be served with the ham.
- Cooking the ham. Smoked ham is already fully cooked, so really all you're doing is reheating it. With that being said, a quick-read thermometer is a good way to tell if a ham is heated evenly. Insert the thermometer near the center of the ham. Once the internal temperature reads 140°F degrees, it's definitely ready to go.
