Equipment

  • 1 large serving board
  • small serving bowls for wet ingredients
  • small spoons, knives and forks for serving

Ingredients

  • 16 ounces serrano ham
  • 8 ounces Spanish cured chorizo
  • 8 ounces Spanish salami
  • 8 ounces Italian truffle salami bites

Cheeses

  • 16 ounces sharp cheddar (in cubes, and shaped like pumpkins)
  • 16 ounces manchego
  • 8 ounces mozzarella pearls (with candy eyeballs)
  • 4 ounces sharp cheddar cheese pumpkin cutouts (using cookie cutters)
  • 8 ounces provolone cheese bats and ghosts

Fruits

  • 3 mandarin oranges
  • 1 bunch black grapes
  • 2 medium apples, cut into slices or rounds
  • 8 fresh figs, halved
  • 1 cup blackberries

Spreads and condiments

Accompaniments

  • ½ cup olives
  • ¼ cup pistachios
  • ¼ cup almonds (we opted for a delicious maple roasted almond from Trader Joe's!)
  • ¼ cup dark chocolate pieces (or your favorite candies, go nuts!)

Serving vessels

  • 36 ounces assorted crackers

Instructions

  • Start by adding any wet items, like apple butter, olives, mozzarella "eyeballs" and caramel sauce to anchor the board.
  • Next add meats, taking care to place meats with pairings whenever possible. Add cheeses, once again keeping in mind pairings.
  • Finally, add crackers, nuts, and any spooky extras to finish. Serve and enjoy!
  • This board can be made one day in advance and stored in the fridge with plastic wrap. Leftovers will keep in the fridge, covered for 2-3 days. Store like items together, for example, cheese in one container, meat in one container, and fruit in another. Do not freeze leftovers.

Notes

  • Please feel free to swap in your favorite meats, cheeses, fruits, crackers, and other accompaniments in a variety of textures, flavors, shapes, etc. Have fun! Please see the blog post for a full list of suggestions for substitutions, suggestions, tips, and tricks.
  • For an appetizer, add 3 ounces of meat per person and 3 ounces of cheese per person. You'll also need a substantial amount of crackers per person, between 3 - 10 ounces if serving charcuterie as a meal.  If serving as a main course, serve 6 ounces of each per person.
  • These nutrition facts are a complete estimate for this recipe as it is impossible to know how much of everything will be eaten and enjoyed!
  • Our suggestions are merely a guide. Please use your favorite meats, cheeses, fruits, nuts, etc.
  • Try to 3-5 varieties of each item on the board if possible.
