Strawberry Latte

Ingredients

Strawberry simple syrup

  • 1 pound strawberries, quartered
  • 1 cup water
  • ½ cup white sugar

Latte

  • 1.5 - 2 ounces homemade strawberry simple syrup (or to taste)
  • 4 ounces whole milk (or any milk of choice, heavy cream, or half and half)
  • 2 ounces espresso (can be substituted for strong brewed coffee)

Instructions

Make the strawberry simple syrup

  • To make the strawberry simple syrup, combine strawberries and water in a small saucepan. Bring to a boil, then reduce to a simmer. Simmer for 20 minutes, until the strawberries are drained of color.
  • Strain the strawberry water using a metal sieve into a separate container. DO NOT press down on the berries, although it is tempting to do so, this will make your strawberry syrup cloudy.
  • Once the syrup is drained, add back to the saucepan over medium-low heat. Stir in the sugar and continue stirring to dissolve. Once completely dissolved, remove from heat and store in an airtight container. Allow to cool completely before adding to iced coffee.

Assemble the latte

  • Add ice and strawberry chunks to a glass. Pour in espresso, followed by milk, and strawberry syrup.
  • If desired, froth cold milk or cream with more strawberry syrup to create a strawberry cold foam to top. Garnish with a strawberry. Enjoy right away!
  • We don't recommend making this drink in advance. The simple syrup can be stored in an airtight container in the fridge for up to 2 weeks. You can also premix the strawberry syrup and milk and store in the fridge up to 5 days in advance.

Notes

  • Looking to cut out sugar? No problem! Simply use allulose in place of white sugar. You will need about 1 & ⅓ cups of allulose to every 1 cup of white sugar, as allulose is slightly less sweet than sugar.
