Keto Fried Pickles (Gluten Free)

These easy gluten free and keto fried pickles are one of your favorite snacks with dill pickles, made healthier! They're super easy to make with pickle slices, and a few ingredients. This recipe is egg free, and made without a deep fryer. All you need for these delicious golden brown fried pickles is a cast iron skillet, and a few pantry staples. Serve with your favorite dipping sauce!

Ingredients

  • 46 whole pickle chips (between 40-50)
  • 6 tablespoon unflavored whey protein isolate (¼ cup + 2 tbsp)
  • ¾ teaspoon cajun seasoning
  • ¾ teaspoon Italian seasoning
  • ½ teaspoon ground pepper
  • teaspoon kosher salt (or to taste, you can sprinkle pickles with more salt after frying if you prefer)
  • oil for frying
  • serve with dipping sauce of choice

Instructions

  • Drain the pickles by removing them from the jar with a slotted spoon. Set aside in a small dish. Heat your oil in a heavy bottomed skillet (like a cast iron) to 375°F. In a shallow dish, combine Isopure and seasonings. Working in batches with a fork, dredge the pickle slices in the mixture until they are well coated, about 4- 6 slices at a time.
  • Drop the pickle slices into the oil immediately after dredging them. Don't pre-dredge anything, or the Isopure breading will stick to the surface you are resting the pickles on.
  • Allow the pickles to get golden brown, this will take about 1-2 minutes on each side. When the pickles are done, transfer to a paper towel lined baking sheet. Let the oil come back to 375°F between batches, as the pickles will lower the temperature of the oil. 
  • Serve theseketo fried pickles with your favorite dipping sauce, and enjoy right away!
