Make the crust by combining almond flour and dry ingredients in a bowl. Save half for the crumble topping.

Press in and bake the crust until golden brown.

Add plums, sugar free sweetener, cinnamon, butter, lemon juice and zest and salt to a saucepan.

Cook for roughly 30 minutes to thicken the plum filling. Add xanthan gum and vanilla extract.

Add plum filling on top of cooked crust, then add the crumble topping.

Bake until golden brown. Allow to cool completely before cutting in.
