    Here's What You Need For Low Carb Mocha Brownies:

    • Almond flour
    • Unsweetened cocoa powder
    • Sweetener of choice
    • Baking powder
    • Xanthan gum, optional, to prevent crumbs
    • Kosher salt
    • Espresso powder or finely ground coffee
    • Unsweetened dark chocolate for baking
    • Eggs
    • Unsalted butter
    • Vanilla extract
    • Full fat sour cream
    • Sugar free chocolate chips, optional

    Here's How To Make Low Carb Mocha Brownies:

    1. Preheat your oven to 350°F. Grease your baking sheet. Place all of your dry ingredients (cocoa powder, almond flour, sweetener, baking powder, salt, binding ingredient, espresso powder) in a bowl and mix together well.
    2. In a separate bowl, melt your butter and add in your baking chocolate. You can also do this in a double boiler, or just do it in the microwave like we did. Be sure to check on it every 30 seconds. We actually like to add the chocolate in after the butter is melted so we don't accidentally burn it.
    3. Next, add your butter and chocolate mixture to your dry ingredient bowl. Mix all together. This would be a good time to taste the batter, as there aren't eggs in it yet and you can get a feel for if you would like to add more sweetener. Everyone's tastes are different, so we recommend that.
    4. Beat your eggs in a small bowl, add in your vanilla extract and add them to the batter.
    5. Next, for my "secret ingredient" that I add to almost everything I bake, sour cream. It makes everything super moist. Fold it in and mix.
    6. If you're adding chocolate chips, do that now. Gently fold them into the batter.
    7. Now that everything is mixed, add your batter to a greased baking pan. Use a rubber spatula to smooth the top.
    8. Put in the oven and bake for 15- 20 minutes. Be careful not to overbake! We like to take ours out when the top is still a bit moist. They will cook the rest of the way in the pan. Let cool for about 20 minutes before cutting. Serve and enjoy!

    Ingredients

    • ½ cup almond flour
    • ⅓ cup unsweetened cocoa powder
    • 1 cup sugar free sweetener of choice
    • ½ teaspoon baking powder
    • ½ tsp xanthan gum, optional
    • ¼ teaspoon kosher salt
    • 1 tablespoon espresso powder
    • 2 ounces baking chocolate (unsweetened, 70% or more cocoa)
    • 12 tablespoon unsalted butter
    • 3 whole eggs
    • 2 teaspoon vanilla extract
    • 2 tablespoon sour cream (full fat)
    • ½ cup sugar free chocolate chips (optional)

    Instructions

    • Preheat your oven to 350°F. Grease your 9x9 pan. Place all of your dry ingredients (cocoa powder, almond flour, sweetener, baking powder, salt, binding ingredient, espresso powder) in a bowl and mix together well. 
    • In a separate bowl, melt your butter and your baking chocolate. You can also do this in a double boiler, or just do it in the microwave like we did. Be sure to check on it every 30 seconds. Next, add your butter and chocolate mixture to your dry ingredient bowl. Mix all together. Beat your eggs in a small bowl, add in your vanilla extract and add them to the batter. Fold in your sour cream.
    • If you're adding chocolate chips, do that now. Gently fold them into the batter. Now that everything is mixed, add your batter to a greased baking pan. Use a rubber spatula to smooth the top. 
    • Put in the oven and bake for 15- 20 minutes, checking at the 15 minute mark. Be careful not to over bake! We like to take ours out when the top is still a bit moist. They will cook the rest of the way in the pan. 
    • Let cool for about 15- 20 minutes before cutting. 

    Notes

    Store in an airtight container in the fridge for up to a week.
