Here's What You Need For Low Carb Mocha Brownies:

Ingredients:

  • 1/2 cup almond flour
  • 1/3 cup unsweetened cocoa powder 
  • sweetener of choice, equivalent to 3/4 – 1 cup of sugar (depends on how sweet you like things. My favorite sweeteners are in my Amazon store, linked below and I usually blend a couple.) 
  • 1/2 tsp. baking powder
  • 1/2 tsp. binding ingredient (our fave is linked below)
  • 1/4 tsp. Himalayan pink salt
  • 1-2 tablespoons espresso powder or finely ground coffee* optional 
  • 2 oz. unsweetened dark chocolate for baking
  • 3 eggs
  • 12 tbsp. unsalted butter
  • 2 tsp. vanilla extract 
  • 2 tbsp. full fat sour cream  
  • 1/3 cup stevia sweetened chocolate chips* optional (our pick is linked below)

Low Carb Mocha Brownies

Here's How To Make Low Carb Mocha Brownies:

Preheat your oven to 350°F. Grease your baking sheet. Place all of your dry ingredients (cocoa powder, almond flour, sweetener, baking powder, salt, binding ingredient, espresso powder) in a bowl and mix together well. 
In a separate bowl, melt your butter and add in your baking chocolate. You can also do this in a double boiler, or just do it in the microwave like we did. Be sure to check on it every 30 seconds. We actually like to add the chocolate in after the butter is melted so we don’t accidentally burn it. 
Next, add your butter and chocolate mixture to your dry ingredient bowl. Mix all together. This would be a good time to taste the batter, as there aren’t eggs in it yet and you can get a feel for if you would like to add more sweetener. Everyone’s tastes are different, so we recommend that. 
Beat your eggs in a small bowl, add in your vanilla extract and add them to the batter.
Next, for my “secret ingredient” that I add to almost everything I bake, sour cream. It makes everything super moist. Fold it in and mix. 
Next, if you’re adding chocolate chips, do that now. Gently fold them into the batter. 
Now that everything is mixed, add your batter to a greased baking pan. Use a rubber spatula to smooth the top. 
Put in the oven and bake for 15- 20 minutes. Be careful not to overbake! We like to take ours out when the top is still a bit moist. They will cook the rest of the way in the pan. Let cool for about 20 minutes before cutting. 
Now, just serve and enjoy!

Ingredients
  • 1/2 cup almond flour
  • 1/3 cup unsweetened cocoa powder
  • 1 cup sugarfree sweetener (we use Lakanto Golden & Swerve)
  • 1/2 tsp baking powder
  • 1/2 tsp binding ingredient (like xanthan gum)
  • 1/4 tsp Himalayan pink salt
  • 1 tbsp espresso powder (optional, and you can use more to taste)
  • 2 ounces baking chocolate (unsweetened, 70% or more cocoa)
  • 12 tbsp unsalted butter
  • 3 whole eggs
  • 2 tsp vanilla extract
  • 2 tbsp sour cream (full fat)
  • 1/3 cup stevia sweetened chocolate chips (optional)
Instructions
  1. Preheat your oven to 350°F.

  8. If you're adding chocolate chips, do that now. Gently fold them into the batter. 

  9. Now that everything is mixed, add your batter to a greased baking pan. Use a rubber spatula to smooth the top. 

  10. Put in the oven and bake for 15- 20 minutes, checking at the 15 minute mark. Be careful not to over bake! We like to take ours out when the top is still a bit moist. They will cook the rest of the way in the pan. 

  11. Let cool for about 15- 20 minutes before cutting.
