This Low Carb Pomegranate and Ginger Gin Bennett is a fun spin on the classic Gin Bennett. This low carb cocktail will delight all of your most palates with it’s gorgeous colors and bright flavor. No one will even notice that this cocktail is sugar free. This keto friendly cocktail is flavorful and strong, made with gin, Angostura bitters, our sugar free keto grenadine, fresh lime juice and is topped with diet ginger beer. Mix these up and delight your taste buds!

Here’s What You Need For This Low Carb Pomegranate and Ginger Gin Bennett:
- Dry gin of choice (we used Bombay Sapphire)
- Lime juice
- Sugar free keto grenadine
- Angostura bitters
- Diet ginger beer (Diet Goslings ginger beer)
- Lime wheels for garnish
What’s a Gin Bennett?
This drink is inspired by the classic Gin Bennett cocktail, which uses a dry gin, Angostura bitters, fresh squeezed lime juice, and simple syrup. We recently found out that the Bennett is actually a variation of the Gin Gimlet! Really the only difference is the addition of aromatic bitters. Well of course, the diet ginger beer is a swap for simple syrup that is normally found in a gin gimlet. If you’re looking for a classic gin gimlet recipe, check out this article. Although ginger beer is not a traditional ingredient found in a gin gimlet (or gin bennett for that matter), we love it inso many of our cocktails. The lovely flavor and fizz adds for an overall very pleasant experience.
In our opinion, a strong ginger flavor is a great base for so many drinks. We do find ourselves using diet ginger beer as a bit of a crutch when it comes to creating low carb cocktails! What can we say, everyone loves it. It’s what makes a Moscow mule so crisp, and it’s great especially around the holidays to add a bit of a warm flavor to your cocktails. The bubbles help make it feel extra special too!
How Is This Low Carb Cocktail Sweetened?
To make this cocktail lower and carbs and give it a ginger and pomegranate spin, we add diet ginger beer for sweetness and flavor, plus a bit of our delicious homemade sugar free keto grenadine. The pomegranate juice and diet ginger beer sweeten this yummy cocktail and it’s pretty effortless.
What Is Diet Ginger Beer?
Traditionally, diet ginger beer is a fermented ginger drink that’s used as a really tasty mixer. It is actually non-alcoholic (think root beer). It’s normally made with a ton of sugar, so for a low carb diet, you will want to find a low carb or sugar free substitute. You can substitute any ginger beer you want for this drink, but our favorite is Diet Goslings Ginger Beer.
If you aren’t concerned with the sugar content, feel free to use whichever brand is your favorite. For those of you following a flexible low carb diet, Diet Goslings will work perfect and it tastes amazing. If you are strict keto, use Reed’s Sugar Free, which is sweetened with erythritol or Zevia ginger beer which is sweetened with stevia. If you opt for a ginger beer with regular sugar, be aware this will increase the calories in this drink. Make sure to make note of that if you are watching your calories.

How Many Servings Does This Recipe Make?
We’d also like to note that this recipe makes 2 cocktails. If you’d like to make a large batch, simply add all ingredients (except ice and diet ginger beer) to a punch bowl and let it chill in the fridge for a few hours before serving. Right before serving, add in ice and ginger beer to the mixture. You will want to serve it in glasses with ice too, so that the drink isn’t too strong.
Does This Make a Good Cocktail For Halloween?
We love dressing this cocktail up for Halloween! It’s great for many holidays with it’s bright vibrant red color of course. Look how great it looks styled for Halloween! If you’re celebrating at home this year, set up a spooky backdrop complete with some dry ice for a spooky scene!
Just a few tips about handling dry ice. First of all, definitely wear gloves when handling dry ice. It’s sooo cold that it will burn you. Not fun. Second, don’t put it in the freezer! It can potentially break your freezer and fridge because again – it’s so cold. Dry ice will last about 24 hours (or up to 36). We like to keep it in a styrofoam cooler to help slow it disappearing. It’s technically a gas, so it sort of evaporates. If you’re going to add dry ice to your drink, make sure it is completely done bubbling before consuming. Again, it’s super cold and can harm you!
We often like to put our dry ice in a glass container that can handle heat well, like the little cauldron pictured. We boil water in a teapot, then add small bricks of dry ice pieces (about 1 inch by 1 inch in size) and then pour hot water over it. The hotter the water, the more it will bubble. Just dump out the water in the container before adding more hot water. The water will be cold from the dry ice, and the cold water interferes with the dry ice that makes the smoking affect.

Fill a cocktail shaker with ice. Squeeze in the juice of 1 lime (about 2 tbsp fresh lime juice). Add in a few dashes of bitters.
Add in your gin and keto sugar free grenadine.
Shake vigorously for about 30 seconds, and then strain into ice filled rocks glasses, top with ginger beer and garnish with a lime wheel.

- ice (for the glasses and the shaker)
