These Italian Sausage Stuffed Peppers are the perfect weeknight dinner. Tender green pepper halves stuffed with hot Italian sausage, red bell pepper, onions and covered in mozzarella cheese. Italian Sausage Stuffed Bell Peppers

Here’s What You Need For Italian Sausage Stuffed Bell Peppers:

Ingredients:

  • 2 whole green bell peppers
  • 4 tbsp of unsalted butter
  • 1 whole red pepper
  • 1/2 yellow onion
  • 5 Italian Sausage Links (casings removed)
  • 1 cup Italian Style or Mozzarella cheese (shredded)
  • Salt and Pepper to taste

Preheat your oven to 350°F. Half your green bell peppers, and sprinkle them with some salt and pepper. Place them on a parchment lined baking sheet. Put in the oven for 20-30 minutes until the peppers are soft. You will also want to slice your onions and red bell peppers into thin strips.

In a hot cast iron skillet, add your butter and then add in the onions and red bell pepper. Cook until soft, about 5 -7 minutes, then remove from the pan. Add in the hot Italian sausage (squeezing from the casing) and brown the meat, then add the red peppers and onions back in.

When the green bell peppers are soft, add the Italian sausage, onions and bell pepper mixture to the pepper halves.

Divide the shredded cheese among the 4 peppers, covering them. Put them back in the oven for 10-15 minutes until the cheese is melted and golden brown

Top with fresh basil if you wish! Dig in and enjoy.
